The most important thing that differentiates these vegetables from other vegetables is that you can increase or decrease any vegetable of your choice. Mix Veg Ingredients:

 

  • 500 gm – Cooking Oil for frying vegetables
  • 2 – pinch – Asafoetida
  • 1/2 – teaspoon Cumin Seeds
  • 2 – tablespoon – Onion paste
  • 4 – Medium Sized Tomatoes (finely chopped)
  • 1-2 – Green Chillies (chopped)
  • 1 – tablespoon Ginger Garlic paste
  • 1 – Inch Ginger (chopped)
  • 10 -12 – Cashews
  • 1/2 – teaspoon Turmeric Powder 
  • 1 – teaspoon Red Chilli Powder (as per taste)
  • 2 – teaspoon Coriander Powder
  • 1/3 – teaspoon Garam Masala
  • 1 – teaspoon Salt, (as per test taste)
  • 1/2 – teaspoon Dried Fenugreek Leaves
  • 1/2 – Cup Chopped Potatoes
  • 1/2 – Cup Chopped Cauliflower
  • 1/2 – Cup Chopped Carrots
  • 1/2 – Cup mushroom
  • 1/2 – Cup chees (paneer)
  • 1/2 – Cup Chopped French Beans
  • 1/2- Cup Chopped Capsicum (Green Bell Peppers)
  • 1/2 – Cup Green Peas
  • 1/2 – Cup Beaten Curd
  • 1/2 – Lemon for sourness (as per taste)
  • 1 – tablespoons – Chopped Coriander Leaves (for garnish)
  • 2 – tablespoons fresh cream (for garnish)

Mix Veg Instructions:


Step 1
First, boil the peas in a pan, wash and dry the mushrooms with a clean cloth, and cut one into two pieces. Wash and chop all the vegetables. Cut paneer and potatoes into cube size.
Step 2
Place a pan on the flame and add oil to fry the vegetables. Fry all the vegetables separately. Fry the potato and paneer cut into cube sizes separately till they turn golden brown. The cashews we have should also be lightly golden brown. Now all our vegetables are fried.
Step 3
Place a pan on the flame and add 2 tbsp oil to it, when the oil becomes hot, add cumin seeds and asafoetide to it. When the cumin starts crackling, add garlic paste to it slowly. When the garlic paste turns golden, add onion paste and fry till it turns golden. After the onion paste is fried add chopped green chili and chopped tomatoes and fry.

Keep stirring them slowly for 4 -5 minutes. When the chopped tomatoes turn into a puree, add coriander powder, chili powder, turmeric powder, salt, and fenugreek leaves and keep stirring slowly, fry on a slow flame for 1 minute.
Step 5
After the spices are fried, add curd to it, keep the flame low, and let it come to a boil while stirring slowly. Roast the gravy till it starts to leave the oil on the sides, then add 1 spin cream and keep stirring slowly. Add 1 cup of water to the gravy and bring the mixture to a boil.
Step 6

When the gravy starts boiling, add the fried vegetables and boiled peas, cashew, fried potatoes, and fried chees slow the flame and mix all the vegetables slowly. If the gravy gets coated well on the vegetables so close the flame. Squeeze half the lemon add garam masala and mix.
So your mixed veg recipe is ready.
Garnish the Mix Veg Recipe with chopped coriander and fresh cream and serve.

Tips And Notes


1 – According to your test, you can apply one teaspoon or more of kitchen king masala from the market. This spice makes the taste of the mixed veg even better.
2 – After the spices are fried while adding fried vegetables to the pan, you can also add some grapes to it. When these grapes come into the mouth while eating, the sour sweet flavor of mixed veg feels very good in the mouth.
3 – You can eat mixed veg with any roti, paratha, puri, nan, and jeera rice, this mixed veg looks very tasty in morning breakfast.
