Veg Cutlet Recipe Ingredients: 

 

  • 1/2 Cup – Carrot (chopped)1/2 Cup – Peas (boiled)
  • 1/2 Cup – French Beans (chopped)
  • 2 – Poteto (big size)
  • 1/2 Cup – Peas
  • 2 – Green Chilli (chopped)
  • 1/3 Cumon Seedes
  • 1/3 tablespoon – Coriander Powder
  • 1/2 teaspn- Garam Masala
  • 1/3 teaspoon – Chat Masala
  • 1/2 teaspoon – Salt (as per taste)
  • 1/2 teaspoon – Red Chilli Powder (as per taste)
  • 1 Cup – Bread Crumbs
  • 2 tablespoons – Green Coriander Leaves (chopped)
  • 2 tablespoons – All Purpose Flour (arrowroot)
  • 4 services – Cooking Oil

Veg Cutlet Recipe Instructions:

 

Step 1
First of all, we will chop all our vegetables, peel the carrots and cut them into small pieces, peel the potatoes and cut them into small pieces, wash the beans, and cut them into half-inch pieces. Some people stream boil the vegetables, some people boil the vegetables in the cooker, but we will cover all the vegetables in a big pan and boil them. Will keep half a cup of peas. Will prepare a cup of bread gram
Step 2
In a nonstick pan, we will put our vegetables, chopped potatoes, 1/2 cup peas, chopped carrots, and chopped beans, and keep water only up to 2 inches above all the vegetables. Put four pinches of salt in the pan and keep it on the flame for boiling. Cover the pan with a big plate, When the water comes to a boil, reduce the flame to medium. It takes 10 to 15 minutes to boil all the vegetables on medium flame.
Step 3
After 10 minutes we will remove the lid to see whether our vegetables are cooked or not. With the help of a fork, we will check the vegetables whether they are boiled properly or not, by burying the fork inside the potato, if it goes inside properly, then it means that all our vegetables have been boiled properly. If the vegetables are not cooked properly, cover them with a lid and let them boil for a while.
Step 4
When all our vegetables are boiled properly, we will remove all the water from the vegetables and spread all the vegetables on a big plate to cool down. After 10 to 15 minutes, when all the vegetables cooled down well, So we will mash all the vegetables with potato masher. Now we will add spices to the mashed vegetables like coriander powder, cumin, red chili powder, salt, chaat masala, garam masala, chopped coriander leaves, Add half a cup of breadcrumbs, and keep half for coating, 1 ½ cups arrowroot, finely chopped green chilies and mix them all well.

Step 5
After mixing everything well, taste if the salt and chili are right or not, you can add more salt and chili according to your test. Put 2 tbsp arrowroot in a bowl add half a cup of water and mix it well. There should be no lumps inside the liquid. The liquid should not be too thick, keep it very thin.
Step 6
Now we will make small balls of the cutlet mixer and after rounding it with both palms will give it a slightly flattened shape. Cutlet size can be small or big as per your choice. After all the cutlets are ready in a flat shape, take them out in the fine liquid of arrowroot and coat them well from the opposite side by putting them in bread crumbs. After courting all the cutlets in bread crumbs, take them out on a plate.
Step 7
Now we will shallow fry all the cutlets, for that put a flat nonstick pan over the flame and add 3 to 4 tbsp cooking oil inside it. When the cooking oil becomes hot, turn the flame to medium and place the cutlets inside the pan with a small gap. After 3 to 4 minutes, lift the cutlets with a flat spoon and see that after turning golden, turn them gently and fry the other side as well. Add a little cooking oil inside the pan.

Fry the cutlets on medium flame from both sides to golden shallow, when our cutlets are well golden fried, take them out and keep them on kitchen napkin paper, by doing this all their extra oil will come out. So now our hot Veg Cutlet Recipe is ready, Serve hot with coriander mint green chutney, or tomato sauce. Tips And Notes


1 – 
You can also add grated fresh paneer to veg cutlets, veg cutlets give a very good taste even with paneer.
2 – If you want, you can also boil the vegetables in a pressure cooker, but keep in mind that the vegetables should not be overcooked in the pressure cooker, that is why we prefer to cover and boil the vegetables in a deep pan.
3 – Some people make veg cutlets by frying them as well, you can also make them by deep frying as per your choice, but keep in mind that while deep frying, keep the flame a little high, Otherwise oil will fill inside the cutlet.
