Aloo Tamatar Ki Sabji Ingredients:

 

  • 200 gm – Tomato (chopped)
  • 1 serving spoon – Cooking Oil
  • 1 serving spoon – Pure Desi Ghee
  • 1 teaspoon – Besan (chana flour)
  • 2 pinch – Asafoetida
  • 1/2 teaspoon – Cumin Seeds
  • 4 – Green Cardamom
  • 2 – Bay Leaf
  • 1 inch – Cinnamon
  • 2 – Dried Whole Red Chili
  • 1 teaspoon – Coriander Powder
  • 1/2 teaspoon – Red Chili Powder (as per taste)
  • 1/2 teaspoon – Kashmiri Red Chili Powder
  • 1/2 teaspoon – Turmeric Powder
  • 1/2 teaspoon – Salt (as per taste)
  • 1/2 teaspoon – Garam Masala
  • 1/2 teaspoon – Amchur Powder
  • 2 – Green Chili (chopped)
  • 1 inch Ginger (chopped)
  • 1/2 cup – Curd (beaten)
  • 1 – Lemon
  • 1 teaspoon – Kasoori methi
  • 1 serving spoon – Green Coriander Leaves ( chopped)

 Aloo Tamatar Ki Sabji Instructions:

 

Step 1
First of all, we will wash the potatoes thoroughly and keep them for boiling. Finely chop the tomatoes, green chilies, ginger, and green coriander leaves. After boiling the potatoes, they will be peeled after cooling. Will cut half of the potatoes with the help of a knife and will break all the potatoes with my hands.

Now we will put a large nonstick pan on the flame and add one tablespoon of cooking oil inside it, when the cooking oil becomes hot, then put asafoetida and cumin seeds inside it. will slow the flame. When the cumin starts to crackle, Then put a teaspoon of gram flour inside it and lightly brown it well.

After gram flour is roasted add green cardamom, cinnamon, dried whole red chili, and bay leaves inside it. After stirring for 10 seconds, add coriander powder, turmeric powder, salt, red chili powder, Kashmiri chili powder, green chili, and ginger and stir continuously with a spoon.

Step 3
After stirring all for 10 seconds, put the beaten curd in it and mix it well. After 15 to 20 seconds, a boil will come inside the spices, and then we will put the chopped tomatoes inside it and soften it while stirring, speed up the flame, it will take 3 to 4 minutes for the tomatoes to become soft. When the tomatoes become very soft, add two cups of boiled water inside and boil well for 2 minutes.

After the water starts boiling well, we will put the chopped and mashed potatoes inside the water and stir well. Will medium the flame, And let the vegetable boil well for 5 to 10 minutes. You can add more hot water to the curry if you want it to be thinner.
Step 5
When the vegetable boils well, add fenugreek leaves rubbed on the palms, garam masala, and dried mango powder, Add the juice of half a lemon, and let it boil well, after it boils well, turn off the flame. Add some chopped coriander leaves and mix well. Take out the potato tomato curry in a serving bowl. Add one serving spoon of desi ghee and mix well. Garnish with a little coriander leaves.
