Lauki is such a vegetable available in almost every season that you can cook it in many ways in vegetables and you can cook it in many ways in sweets too. Eating bottle gourd in any season and any form is very beneficial. Consuming bottled gourd juice early in the morning on an empty stomach is very helpful. Lauki ka halwa is a great dessert option to be served after a meal. In this recipe, after grating fresh lauki, it is cooked in sugar and milk on a medium flame and after cooking, mawa and cardamom powder and dry fruits are added to it and served after cooling. So let’s make this traditional and delicious dessert.

Lauki Ka Halwa Recipe Ingredients: 

 

  • 1 kg – Lauki
  • 200 Gm – Suger
  • 100 Gm – Mawa
  • 250 Gm – Fresh Milk (boiled)
  • 1 – Serving spoon Desi Ghee
  • 1/2 Teaspoon of green Cadamoms Powder
  • 25 Gm – Cashew
  • 25 Gm – Raisins
  • 25 Gm – Almond

Lauki Ka Halwa Recipe Instructions:

 

Step 1
First of all, we will put a nonstick pan on top of the flame and put one teaspoon of desi ghee in it, when it becomes hot, then put almonds and cashews inside it and slow the flame, while stirring slowly, roast both the dry fruits lightly. It will take 2 to 3 minutes, after roasting, turn off the flame, and after the dry fruits cool down, leave the cashews intact and cut the almonds into small pieces. Cut off the stalks of raisins and keep them clean.
Step 2
Now peel the bottle gourd and grate it wash the grated bottle gourd thoroughly two or three times with clean water and drain all the water in a sieve. Keep in mind that the bottle gourd should be fresh and soft, if the bottle gourd is overripe then we will have to grate it after removing the seeds from the middle and if the bottle gourd is fresh and soft, then there is no need to remove the seeds. Peel the bottle gourd and grate it before eating a little bit. Bottle gourd should not be bitter. If bottle gourd is bitter, do not use it. It is poisonous.
Step 3
Now put a large nonstick deep pan on the flame and put one serving spoon of desi ghee inside it, when the ghee becomes hot, put grated lauki inside it and mix it slowly while stirring it to speed up the flame. Roast the bottle gourd on high flame for 10 minutes, by doing this, its raw smell will disappear.

Step 4
After 10 minutes add boiled milk and keep stirring continuously, after five minutes reduce the flame to medium. After grating mawa, stirring slowly for 10 to 15 minutes, you will see that Loki has absorbed all the milk, after that we will add sugar and keep stirring. When the sugar melts well inside the gourd halwa, turn off the flame and keep stirring continuously.
Step 5
Stirring slowly, the gourd halwa will be slightly tight, Stirring for 8 to 10 minutes, the gourd halwa will start coming in its perfect halwa-like shape. Do not tighten the halwa too much. Even after cooling, the halwa becomes a little more tight. When the halwa becomes tight in its shape, close the frame and mix green cardamom powder inside it.
Step 6
No,w we will mix the chopped dry fruits inside the gourd halwa, keeping some dry fruits for garnishing. We will then mix all the other dry fruits inside the halwa. No, take the lauki halwa out and put it in a serving bowl. Our Lauki ka Halwa Recipe is ready.

You can serve it both cold and hot. Keep Kit in the refrigerator to cool down and after it cools down well, serve it garnished with dry fruits.

 

Tips And Notes


1 –
Always use fresh and soft Lauki (gourd). If our gourd is fresh and soft then we will not need to remove its seeds if the gourd is ripe then we should grate it after taking out its seeds.

2 – You can also use Nestle Milkmaid or Amul Mithai mate instead of Mawa in the Lauki Halwa recipe, for that you will not even need to add sugar to it.
3 – You can serve Lauki Halwa in both hot and cold ways. Before serving hot, garnish with chopped dry fruits and serve. To serve chilled, chill it well in the refrigerator and put it in a serving bowl, garnish with dry fruits, and serve.
