To make this recipe, soft and small-sized tindas are better. Wash the small-sized soft tindas and cut them into four parts from the middle. Add asafetida, and cumin seeds along with some aromatic spices like red chili powder, garam masala, coriander powder, turmeric powder, and tomato along with salt. A delicious paste is prepared after cutting and is cooked well by adding to the tandas. When the tinde vegetable is ready, serve it by garnishing it with chopped coriander leaves. Tinde Ki Sabji Recipe Ingredients: 

 

  • 250 gm – Tinde
  • 2 tablespoon – Cooking Oil
  • 2 Pinches -Asafoetida
  • 1/2 teaspoon – Cumin Seeds
  • 6 Garlic Clove ( finely chopped)
  • 1  Onion (medium size, chopped)
  • 1  Tomato (big size, chopped)
  • 1  Green Chilli (chopped)
  • 1 inch – Ginger (chopped)
  • 1 teaspoon – Coriander Powder
  • 1/2 teaspoon – Red chili powder
  • 1/2 teaspoon – Turmeric powder
  • 1/2 teaspoon – Garam masala
  • 1/2  teaspoon – Amchur Powder
  • 1/2  lemon
  • 1 tablespoon – Green Coriander Leave
  • 1  teaspoon – Butter
  • 1/2 teaspoon – Red Kashmiri Chili (for color)

 

 Tinde Ki Sabji Recipe Instructions:

 

Step 1
First, we will take two and a half hundred grams of soft fresh tinde after washing peel it, and cut it into four parts from the middle with the help of a knife. and soak them in water. Chop all the vegetables like garlic, onion, tomatoes, green chilies, green coriander leaves, and ginger chop them all finely.
Step 2
Put a nonstick deep pan on the flame and add cooking oil inside it, when the oil gets heated well, put asafoetida and cumin seeds inside it, when the cumin starts to crackle, put chopped garlic in it and fry it to golden Will do when the garlic becomes golden fry, then after that we will put the chopped onion and let it be golden fry, So put greed chili, ginger, slow the flame and stirring slowly, after 10 seconds, add all your spices like coriander powder, red chili powder, turmeric powder and salt inside it and stir slowly.

 


Step 3
After 15 seconds add chopped tomato and stir it to soften it. It will take about 2 minutes for the tomatoes to get soft properly. When the tomatoes become soft, take out the chopped tinde from the water and put them in the pan, and mix them all well. Now we will reduce the heat completely cover the pan with a lid and let the cold cook on slow flame.
Step 4
Tinde takes 10 to 15 minutes to get ready, After 5 minutes, we will remove the lid, flip the tinde over with a spoon, and cover the lid again. After 5 minutes again remove the lid and stir the tindas well with a spoon to see if our tinde has become soft or not if the tinde has not become soft then cover the lid again and let them become soft.
Step 5
When our tindas become very soft, then turn off the flame, now add garam masala and dry mango powder inside them, and mix, after eating a little tinda vegetable, see if the sourness is less or if there is less spice, then add a little lemon juice and little coriander leaves. mix according to taste. Will take out the tindas sabzi in a serving bowl and prepare it for tempering red chili powder over it.
Step 6
Put a non-stick small pan on top of the flame and put butter inside it, when the butter becomes hot, put red Kashmiri chili powder inside it, and when it gets hot enough, put it on top of tinde ki sabzi and garnish it. Will also add some chopped coriander leaves. Now our Tinde Ki Sabji Recipe is ready, serve it hot, you can eat it anytime for lunch or dinner with roti naan or paratha and curd raita.

Tips and Notes

1 – Fresh and soft tindas should always be used to make tinde curry. If the tide is stale, it will take longer to cook and its test is also not good.
2 – There is no need to add water to cook the Tinda because there is already a lot of water in the tinda, but if you want to keep some gravy in the vegetable Tinda, then you can add some water.
3 – Ayurveda doctors recommend eating green vegetables like lauki, tori, and tinda for any stomach problems. You can control your stomach problems by eating tienda sabzi.
