People like to prepare and eat Aloo Ka Halwa Recipe as a fruit dish during the observance of Janmashtami, Shivratri, Navratri, and other religious fasts in Hinduism. Many types of salty dishes are mostly made from potatoes, but this is such a sweet and tasty pudding made from potatoes that people eat very fondly. To make this dish, we have to wash the potatoes thoroughly with clean water and boil them. After the potatoes are boiled, they cool down and grade them. Then put a little desi ghee in the pan and fry the graded ones slowly on low flame. While stirring slowly, roast it lightly. After it is roasted, add sugar to it and roast it for some more time. After it is ready, add dry fruits like almonds, cashews, raisins, and saffron leaves and serve it hot.

Aloo Ka Halwa Recipe Ingredients:

 

  • 400 gm – Potatoes (boiled)
  • 100 gm – Pure Desi Ghee
  • 100 gm – Sugar (as per taste)
  • 15 – Almond (chopped)
  • 15 – Cashew
  • 15 – Pistachios (finely chopped)
  • 25 – Raisin
  • 1 pinch of saffron Leaves
  • 1/2 teaspoon of green Cardamom Powder


Aloo Ka Halwa Recipe Instructions:


Step 1
First of all, wash good quality potatoes like Chipsona thoroughly in water and boil them. After the potatoes are boiled, peel them and let them cool. When the potatoes cool down, grade them. Place a non-stick pan over the flame and add desi ghee inside it. When the desi ghee becomes a little hot, put the graded potatoes inside it reduce the flame to medium, and keep stirring the potatoes with the help of a flat spoon.
Step 2
Fry the potatoes a little while moving slowly. After cooking for about 10 minutes, the color of the potatoes will start changing slightly, which means they are roasting slowly. After 10 minutes, when the potatoes get roasted with a slight color change, add sugar inside it and mix well with a flat spoon. Keep it on medium and keep stirring continuously. Slowly the sugar will start melting, And after stirring for 10 to 15 minutes, the potatoes will start releasing ghee little by little. This means our halwa is ready, now we will turn off the flame.
Step 3
Place a non-stick pan over the flame and add 2 tablespoons of desi ghee. When the desi ghee becomes hot, cut the almonds into thick pieces separate the whole cashews from the middle and put them inside the ghee, and stir slowly. Will roast and turn down the flame completely.
Step 4
When cashew nuts and almonds are roasted, turn off the flame and put both of them inside the halwa and also add finely chopped pistachios, Break the stems of the raisins and put them inside the halwa and mix well. Also, put saffron leaves and Green Cardamom Powder inside the halwa and mix well. We will mix some dry fruits and keep them for garnishing. We will add them on top and garnish them. After mixing all the dry fruits well, take out the halwa in a serving bowl and garnish with some remaining dry foods on top. Now our Aloo Ka Halwa Recipe is ready, serve it hot.

Tips And Notes

 

1 – Some people also add a little food color to the potato halwa, which improves the color of the halwa and makes the presentation better. If you want, you can add a little food color to the halwa after the potatoes are roasted.
2 – You can add any dry fruits as per your choice in potato halwa. The use of dry fruits in abundance gives a better taste to potato halwa.
3 – Use saffron leaves after soaking them in some milk for 30 minutes. This gives a better color to the saffron.
4 – The halwa should be roasted well on low flame while continuously stirring. The more you roast the potatoes, the tastier and grainier the halwa will be. To make potato halwa, a heavy bottom pan should be used because while making potato halwa, it often gets burnt due to sticking to the bottom.
5 – Some people also roast the potato halwa by adding milk to it after it is roasted, but I do not make it this way. If you want, after the potatoes are roasted, you can add milk, roast it a little more, and then add sugar.
