People who are crazy about taste, roast brinjal on raw coal flame and make delicious smoky flavored brinjal bharta. But nowadays, due to gas stoves in homes, it is not possible to get the taste of raw coal smoke. We can get that old smokey flavor only at roadside dhabas. Today we will tell you how to make the Baingan Bharta recipe in two ways.
Today we will also tell you how to make brinjal bharta by frying it in one pan and the other in a cooker. In this recipe, round big brinjals are roasted on a gas stove on raw coal flame or low flame on a tandoor, remove the burnt peel and mash it well. Then that mashed brinjal is prepared by frying it with garlic, onion, tomato, green chili, and ginger along with some aromatic spices and adding boiled peas. When ready, garnish it with chopped coriander and serve with roti, naan, or paratha. So let’s make this delicious recipe with excellent smoky flavor.

  • 1 – Brinjal (large round shape)
  • 1/2 cup – Onion (chopped)
  • 6 cloves – Garlic (chopped)
  • 1 inch – Ginger (chopped)
  • 2 – Green Chilli (chopped)
  • 1 cup – Tomato (chopped)
  • 1/2 cup – Peas (boiled)
  • 1 tablespoon – Green Coriander Leaves
  • 2 tablespoon – Cooking Oil
  • 1 tablespoon – Desi Ghee
  • 1 pinch – Asafoetida
  • 2 pinches – Cumin Seeds
  • 1/2 teaspoon – Salt (as per taste)
  • 1/2 teaspoon – Red Chilli Powder (as per taste)
  • 1/3 teaspoon – Coriander Powder
  • 1/2 teaspoon –  Red Kashmiri Chilli Powder
  • 1/2 teaspoon – Turmeric Powder
  • 1/2 teaspoon – Fenugreek Leaves
  • 1/2 teaspoon – Garam Masala
  • 1/2 teaspoon –  Dry Mango Powder
  • 1/2 – Lemon

Baingan Bharta Recipe Instructions:


Step 1
First, wash a large round-shaped brinjal thoroughly and dry it with a kitchen towel. Make two or three big cuts in the brinjal with a knife. – Place a mesh made of iron wire over the gas flame and keep the brinjal on it to roast on low flame. – Keep turning the brinjal and fry it from all sides until it becomes soft. On low flame, the brinjal becomes soft for 10 to 15 minutes. And its upper peel will burn well. After frying for 10 to 15 minutes, when the brinjal becomes soft, turn off the flame and let the brinjal cool down a little.
Step 2
When the brinjal cools down a bit, slowly remove the burnt skin from the top with the help of a knife and clean it. Now cut off the stem of the brinjal with the help of a knife put all the brinjals in a big ball and mash them well. Cover the mashed brinjal and keep it aside.
Step 3
Place a non-stick pan over the flame and pour cooking oil into it. Add a pinch of asafoetida and cumin seeds when the cooking oil gets heated well. When the cumin seeds start crackling, add chopped garlic to it and make it light golden. Garlic is golden. After it is done, add chopped onion inside it and soften it. When the onion becomes soft, add chopped chili and chopped ginger ide it and stir slowly.

Step 4
Now while moving slowly, add coriander powder, red chili powder, turmeric powder, and salt as per the test and fry it well. After stirring for 10 seconds, the spices will be roasted well. Now we will add chopped tomato inside it and soften it while stirring slowly. After stirring for about 2 minutes, our tomatoes will soften nicely. Once the tomatoes become soft and our masala is also roasted well, then we will put the mashed brinjal and boiled peas inside the pan and mix well. Cook the bharta while stirring well on a medium flame for three to four minutes.
Step 5
After about 4 minutes, turn off the flame and add garam masala, sourness, or lemon juice as per taste and some chopped coriander leaves inside the brinjal bharta, Add Kasoori Methi by rubbing it on the palms and mix well. Take out the brinjal bharta in a serving bowl. Eat some brinjal bharta and see if any spice is lacking then add it as per your taste. Now heat one tablespoon of desi ghee and add red Kashmiri chili to it. And spread this tadka over brinjal bharta. Now our Baingan Bharta Recipe is ready. Serve it hot. You can eat it with anything like roti, naan or paratha.
Now we will tell you how to make Baigan Bharta in a pressure cooker in another way. It is prepared very quickly.
Step 1
Wash the brinjal thoroughly, peel it, and cut it into small pieces. Pour some cooking oil inside the pressure cooker. When the oil gets heated well, add a pinch of asafoetida and a little cumin. When the cumin starts crackling, add garlic to it and turn it slightly golden. After the garlic becomes golden, add onion and soften it.
Step 2
When the onion becomes soft, add chopped green chili and ginger inside and add coriander powder, red chili powder, salt, and turmeric powder and mix well. After stirring for about 10 seconds, add chopped tomato and soften it well. When the tomatoes become soft, add the chopped brinjal and sprinkle a little water, mix everything well cover the lid of the cooker, and let it cook for two whistles.
Step 3
After 2 whistles, turn off the flame and let the gas from the cooker release on its own. When the gas comes out, open the lid of the cooker and mash the brinjal well. Now add sourness, garam masala, and chopped coriander inside the brinjal bharta and mix well. After taking it out of the serving bowl, make red chili tadka (tempering) and pour it on top. Tips And Notes


1 –
I always like to make brinjal bharta recipe with boiled peas. If you do not like to eat boiled peas then you can make brinjal bharta without adding it. But the taste of boiled peas in brinjal bharta is very good and the looking of brinjal bharta also becomes very beautiful.
2 – Preparing brinjal bharta inside the cooker is a very simple and quick recipe, you must try it, as it gets prepared very quickly.
3 – To make brinjal bharta, one should always choose fresh, big, and light-sized brinjal. Lightweight brinjal has less amount of seeds inside it and more pulp.
4 – Before placing the brinjal over the flame, apply a little mustard oil on it. Once you learn to do this, its peel will come off easily and if you want, after making cuts in the brinjal, you can also press garlic cloves and green chilies inside it.
