Gajar Ka Halwa Recipe Ingredients:

 

  • 1 kg – Gajar (carrot)
  • 1.25 liters – Milk (pure)
  • 200 gm – Suger
  • 200 gm – Mawa
  • 10 – Green Cardamom Powder
  • 50 gm Almonds
  • 50 gm – Cashew nuts
  • 10 gm – Pistachios
  • 50 gm – Deshi Ghee (pure)

 

Gajar Ka Halwa Recipe Instructions:


Step 1
First of all, peel 1 kg of fresh red carrots, wash them thoroughly with water grade all the carrots, and put their peels in water. Take out the grated carrots from the water put them in an iron strainer and drain all the water. Pour the milk into a large non-stick bottomed pan and boil it until the milk starts boiling. Keep stirring it with a flat spoon. Be careful that the milk does not stick to the bottom. When the milk boils, add the grated carrots into it. Keep stirring slowly with a spoon.
Step 2
After adding the graded carrots to the milk, while stirring slowly, when the milk comes to a boil, So reduce the flame to medium and let the grated carrots in the milk boil slowly and keep stirring it now and then. Roast the milk slowly on low flame and it will start thickening little by little. It will take at least 25-30 minutes for the milk to thicken. Keep stirring it frequently.

Step 3
After about 30 minutes, when the milk thickens well, add sugar to it and keep stirring it slowly. Keep the flame medium, not very high. It will take 10 to 15 minutes for the halwa mixer to become slightly tight with sugar, keep stirring it well. After about 15 minutes, while stirring slowly, add the graded mawa inside the halwa and mix it while stirring.
Step 4
Add mawa stir the halwa slowly and cook it for about 10 minutes on medium flame. After cooking for 10 minutes, add one serving full amount of desi ghee inside the halwa, mix well stir for 2 minutes, and turn off the flame. Add cardamom powder and mix well. Roughly chop the almonds and cut whole cashews into two pieces. Chop the pistachios. Place a small non-stick pan over the film and add one tablespoon of desi ghee. When the desi ghee becomes hot, place the chopped pieces inside it. Add almonds and cashews and stir slowly until they turn light brown. Keep the flame low.
Step 5
When cashew nuts and almonds become light brown and roasted, turn off the flame. Put some roasted cashews, almonds, and chopped pistachios inside the halwa and mix them. Keep some cashews, almonds, and pistachios for garnishing. Take out the halwa in a serving bowl add one serving spoonful of desi ghee and mix well. After that add dry fruits on top and garnish. 1 – To make halwa, one should always use red and fresh carrots and the carrot should always be thick otherwise it does not grade easily while grading and it breaks.
2 – While grading carrots one must grade carefully. The grater is so sharp that it sometimes cuts fingers while grading carrots.
3 – You can add any dry fruits of your choice in carrot halwa and do not add the dry fruits which you do not like in carrot halwa. Always add dry fruits only after roasting them. Halwa recipe can be obtained by roasting dry fruits. It tastes very good.
4 – You can store carrot halwa in the fridge for 10 to 15 days. It does not spoil and whenever you want to do a survey, take it out from the fridge and do the survey only after heating it because it is only after heating the halwa. The test comes.
