Sabudana Kheer Recipe is a sweet fruit dish specially prepared in the Hindu religion during the religious fast of Maa Durga’s Navratri for 9 days kept by the ladies in the houses. Sabudana is called tapioca pearl and sago in English. During the fast, women prepare and eat many types of de from sago, like sago khichdi, sago papad, sago dalia, sago tikki, sago khee,r etc. Dishes made from sago give instant energy, and sago has a cooling effect, it balances the temperature in our body, hence it is very beneficial during summers.
Sago kheer is used to give energy to small children at the time of teething. Sago is available in the market in two sizes, small and big. We use small sago to make kheer. In the recipe, the sago is soaked in water for 10 to 15 minutes. After that, boil the milk, put the sago inside it, and cook it slowly on low flame for 20 to 30 minutes till it becomes soft. After that, add a balanced quantity of sago inside it. Sugar is added after it is boiled well, chopped dry fruits and crushed green cardamom powder are added. Sabudana Kheer Recipe Ingredients:

 

  • 100 gm – Sago (small size)
  • 1 liter of milk (full cream)
  • 100 gm – Sugar (as per taste)
  • 25 – Almonds (soaked overnight)
  • 20 – Cahews (tear nuts)
  • 25 – Raisins
  • 20 – Pistachios (finely chopped)
  • 1 pinch of saffron Leaves
  • 6 – Green Cardamom Powder


Sabudana Kheer Recipe Instructions:


Step 1
First, wash small-sized sago thoroughly twice with clean water and soak it in water for 15-20 minutes. Soak almonds in water the night before. Peel the soaked almonds, chop them roughly, chop the pistachios finely, soak the saffron in two spoons of milk, chop the small cardamom, and make its powder.
Step 2
Place a non-stick vessel over the flame and bring 1-liter full cream milk to boil on medium flame. Keep stirring the milk with a flat spoon, taking care that it does not stick to the bottom of the vessel. After the milk starts boiling, slow down the flame. Take out the sago soaked for 20 minutes in an iron sieve and remove all the water.
Step 3
Carefully put it inside the boiling milk. Keep stirring the sago continuously with a spoon until it starts boiling. After the Sabudana Kheer starts boiling, reduce the flame and let it boil slowly on a low flame. After some time, keep stirring the Sabudana Kheer with a spoon. Be careful that the kheer does not stick to the bottom of the vessel, hence, keep stirring the kheer continuously after some time.
Step 4
After about 15 minutes, while stirring, the kheer will start thickening. When the kheer becomes thick, pick it up with a spoon and drop a little bit from above and see that the milk and sago should fall together. Now add sugar inside the kheer and mix well.
Step 5
After adding sugar, once it starts boiling, turn off the flame and add cardamom powder inside the kheer. Add all the chopped nuts and mix well. Will reserve some dry fruits for garnishing. Take out the kheer in a serving bowl and garnish it with some leftover saffron soaked in milk. So, our Sabudana Kheer Recipe is ready, serve it hot or after cooling as per your choice.

Tips And Notes

 

1 – After putting the soaked sago in boiling milk, you should keep stirring it continuously with a flat spoon on medium flame. Otherwise, your milk may curdle, and there is a risk of the recipe getting spoiled. Even after boiling, the kheer should be stirred every minute. Otherwise, the kheer may burn at the bottom.
2 – Sabudana kheer becomes a little thick after cooling, hence, while cooking, we should keep its thickness accordingly. And if your Sabudana Kheer turns curdled after cooling, then you can boil it and add milk and sugar as per your taste.
3 –If you are not making Sabudana Kheer for fasting, then you can make flavored Sabudana Kheer by adding your favorite vanilla essence, strawberry essence, or rose water to it, it looks very tasty. Along with this, use plenty of dry fruits in the kheer, the kheer tastes very good with dry fruits.
