Introduction – Hello friends, Today we will tell you about a fragrant, tasty, healthy sweet. Moong Dal Halwa is a great sweet traditionally made in North India and across the country. In today’s freezing weather, you will often see Moong Dal Halwa being sold hot in sweet shops. Many people like to eat it hot there. This recipe is prepared in pure desi ghee and plenty of dry fruits are added, hence eating it hot during winter is very beneficial and healthy for the body. You can serve this delicious dish made from moong dal both in the form of halwa and barfi. Halwa is served hot and barfi is served cold. This halwa is often served as a sweet after eating at a wedding, birthday party, kitty party, or any other party function. On the occasion of a special first birthday party for twins on the 23rd of January, we received an order to make this halwa on the menu catering to 500 to 550 people. To make this recipe, yellow moong dal is soaked in water for 3 to 4 hours, after which it is coarsely ground and roasted with a certain amount of desi ghee on a medium flame for a long time. When it gets roasted well and starts getting aroma, sugar syrup is prepared inside it and cooked. After it is ready, chopped dry fruits and green cardamom powder are mixed and served hot. Moong Dal Halwa​ Ingredients: 

 

  • 250 gm Yallo Moong Dal
  • 250 gm Pure Desi Ghee
  • 75 gm Suger
  • 6 Green Cardamom Powder
  • 50 gm Cashew
  • 50 gm Almond, coarsely chopped

Moong Dal Halwa Instructions:


Step 1
First, wash the yellow moong dal thoroughly two to three times with clean water and soak it for three to four hours. When it has been soaked properly for three hours and swells, remove it from an iron sieve, drain all the water, put it in a grinder jar, and grind it very coarsely. We will then roughly chop the almonds, cut the whole cashew nuts in half, and cut them into two pieces. Finally, grind the cardamom to make a fine powder.
Step 2
Now put desi ghee in a large non-stick deep heavy bottom pan and melt it when the desi ghee melts and gets heated well, So put chopped cashews and almonds in the ghee and fry them until they turn light brown. When cashews and almonds turn light brown, take them out and keep them on a plate. Now once the ghee gets heated properly, once it gets heated, put it inside the ground dal in it and keep stirring continuously. Once the dal starts crackling, reduce the flame to medium and keep stirring the dal continuously.

 Step 3
After 10-15 minutes, the moong dal will start roasting slowly. Keep in mind that keep stirring the dal regularly by turning it, otherwise it will stick to the bottom and burn. It takes 40 to 50 minutes for the dal to be roasted properly. Keep the flame on medium and keep stirring the dal continuously.
Step 4
After 40 minutes, slowly the dal will start getting grainy while roasting and the aroma of roasting will start coming from inside it and ghee will start releasing in the pan and its color will also become light brown. Now turn off the flame and make sugar syrup for halwa.
Step 5 – Place a big vessel over the flame and put 75 gm sugar and 300 gm water inside it. Keep stirring continuously with a spoon. When the sugar syrup boils well, add cardamom powder into it and turn off the flame.
Step 6
Now we will keep the halwa dal that we had roasted in the pan over the flame and make the flame very slow and slowly pour the sugar syrup inside it and mix it with a spoon. Pour the syrup very carefully and slowly. The halwa starts boiling immediately. Now increase the flame a bit and stir the halwa continuously until its consistency thickens.
Step 7
While stirring for about 5-10 minutes, the consistency of the halwa will get better and it will start releasing ghee in the pan. When the halwa starts releasing ghee in the pan, turn off the flame and add some roasted dry fruits to the halwa. Will mix and reserve for garnishing. Take out the halwa in a serving bowl and garnish with the remaining dry fruits. So, our delicious healthy Moong Dal Halwa is ready. It will be very hot now when it is ready to eat, you can serve it.

Tips And Notes

 

1 – You can eat hot halwa by pouring milk cream on it, it tastes very tasty or after it cools down, eat it with ice cream, it tastes very tasty.
2 – While making syrup for halwa, sometimes the sugar is very dirty and to remove its dirt, you take a serving spoon of water add very little milk in it, and pour it into the syrup. By doing this, all the dirt of the sugar gets collected on top while it is boiling. it’s done, you take it out and throw it away
​3 – You can add dry fruits as per your choice inside moong dal halwa like pistachio, saffron, raisins, etc. The more dry fruits you add in the halwa, the tastier will be the halwa and its garnishing will also be better.
4 – You can store the halwa in the refrigerator for 6-7 days, it does not spoil and before eating you can serve it after heating it or you can also eat it cold as per your choice.

Ans: Traditionally moong dal halwa is made by cooking it in desi ghee and adding sugar, but some people make it by adding milk or khoya to the halwa as per their taste. You can cook it by adding milk as per your choice.

Ans: Moong dal halwa is made after roasting it in ghee on low flame. You can use it by keeping it in the freezer for a week to 10 days. It does not spoil. Before using, take it out of the freezer, heat it, and serve.
