Mutton Kofta Recipe Ingredients:


For Mutton Kofta

  • Mutton Keema – 500 gm
  • Ginger – 2 inch
  • Garlic Clove – 15
  • Onion – 1 medium size
  • Mint leaves – 1/2 cup
  • Green Coriander Leaves – 1/2 cup
  • Roasted Gram – 1/2 cup (powder)
  • Bread Crumbs – 2 tablespoon
  • Cashew – 20

For Masala Solution

  • Red Chili Powder – 1/2 teaspoon
  • Coriander Powder – 1 teaspoon
  • Cumin Powder – 1 teaspoon
  • Black Pepper Powder – 1 teaspoon
  • Garam Masala – 1/3 teaspoon
  • Salt – 1 /3 teaspoon (as per taste)
  • Water – 1/2 cup

For Curd Mixer

  • Onion – 2 big size (fried)
  • Curd – 1/2 cup
  • Tomato – 4 (chopped)

For Mutton Kofta Gravy

  • Cooking Oil – 250 gm
  • Black Pepper – 12
  • Green Cardamom – 4
  • Clove – 6
  • Cinnamon – 1 inch
  • Black Cardamom – 2
  • By Leaf – 4
  • Degi Red Chili Powder – 1 teaspoon
  • Green Chili – 2 (chopped)
  • Coconut Sheil Dust – 2 tablespoon
  • Kewda – 1 tablespoon
  • Water – 2 Cup

For Garnishing

  • Green Coriander Leaves – 2 tablespoons (chopped)
  • Fresh Creme – 2 tablespoon

Step 1
First, inside 500 grams of mutton mince, a handful of green coriander, a handful of mint, half a cup of roasted gram powder, 20 cashew nuts, half an inch of ginger, two green chilies, 15 garlic cloves, 1 tsp salt, 1 tsp coriander powder, 1/2 tsp red chili powder, 1/2 tsp Turmeric Powder 1 tsp Cumin Powder 1 tsp Black Chilli Powder 1 tbsp Butter 2 tbsp Bread Crumbs 1/2 tsp Garam Masala Put all these items in a big mixer grinder jar and grind them finely.

When the mincemeat mixer is finely ground, take it out in a big vessel, apply refined oil on both hands and make small round balls of lemon size from all the mixers. Applying oil on the palm will prevent the mixer from sticking to your hands. 15 to 20 balls will be prepared from all this mutton keema mixer.

Now, we will prepare the gravy of mutton kofta. Place a non-stick pan over the flame and add 200 grams of cooking oil. When the oil gets heated well, put two big-sized finely chopped onions inside it and a slotted spoon. Will roast golden brown while stirring. When the onion becomes golden brown, take it out on a plate and keep it aside.

Step 4
Now put two tablespoons of cooking oil in a non-stick pan and keep it on flame. When the oil gets heated well, add chopped tomatoes inside and soften them by stirring with the help of a slotted spoon. When the tomatoes become soft well, So take them out in a vessel and let them cool. Now put golden fried onions, softened tomatoes, and half cup curd in a mixer grinder jar and grind them well to make a paste.

Now, we will prepare the spice solution for the gravy. For that, pour half a cup of water into a big bowl, add one teaspoon of chili powder, one teaspoon of coriander powder, half a teaspoon of turmeric powder, half a teaspoon of cumin powder, half a teaspoon of salt (as per taste) and half a teaspoon of garam masala, and We will mix it with the help of a spoon, taking care that there are no lumps inside the solution now we will keep it aside.

Now, we will shallow fry the mutton kofta minced balls that we had made. For this, we will place a non-stick pan over the flame and pour 150 grams of cooking oil inside it. When the cooking oil gets heated well, we will fry the minced meatballs inside it. Put the kofta balls and fry them golden shallow. Put the balls of minced meat in cooking oil and leave them for some time. Do not disturb them with a spoon. When they become light golden from one side, then gently fry them on the other side with the help of a fork. Will fry golden shallowly even after turning it. Shallow fry the remaining koftas in the same manner.
Step 7
Remember that do not put too many balls of minced meat inside the pan at once. Fry only as many balls as you can fit at one time. If you add more balls, the minced meatballs will break in the oil.

Now, we will prepare the gravy for Keema Kofta. Place a non-stick pan over the flame and add four tablespoons of cooking oil inside it. When the oil gets heated well, add green cardamom, black cardamom, cloves, cinnamon, Bay Leaf, and black peppercorns. And let it crackle. When the whole spices crackle, add one tablespoon of garlic ginger paste, degi mirch powder, chopped green chili, and stir well with a spoon after 10 seconds. Spice solution we had prepared inside it, stir it with the help of a spoon and let it boil well.

Keep stirring continuously with the spoon. It will take 15 to 20 seconds to roast the spices properly. After about 20 seconds, when the spices are roasted well, and the aroma starts coming out, then add onion, tomato, and curd paste inside it and keep stirring continuously with a spoon. We will also put the powder from the coconut shells inside it, and, while stirring continuously with a spoon, fry the spices thoroughly on low flame for 2.5 to 3 minutes.

Stir continuously for 2.5 to 3 minutes. When the spices are roasted well, and the oil starts floating on top, then pour two cups of boiled water into it and let it boil well for 2 minutes. Add water as per your choice in mutton kofta gravy. If you want the gravy to be thin, then add more water. If you want the gravy to be thick, then add less water. When the gravy starts boiling well, then carefully put the shallow fried mutton kofta inside .t, after it boils, cover it with a lid, reduce the flame, and let it boil well for about 15 minutes.

After boiling the Keema Kofta on low flame for 15 minutes, we will turn off the flame Add kewra and mix well. Garnish with fresh cream and chopped coriander leaves. 2 – If you do not want to shallow fry the Keema Kofta, then you can directly add the Keema Kofta gravy to the gravy and cook it slowly on low flame. But for this, make mutton keema balls and dry them in a strong fan air for 30 to 40 minutes.
