The secret of Afghani chicken’s deliciousness lies in the way it is marinated, fresh curd, fresh cream, coriander, mint leaves, and lemon juice which gives it a slight tang and a mixture of cumin, garam masala, and some spicy spices.
These ingredients make Afghani chicken tender and give it an unforgettable creamy taste. To make this delicious recipe, After washing the fresh chicken thoroughly with water, small cuts are made and garlic, ginger paste, salt, and lemon juice are added inside it, mix everything well and keep it aside for about half an hour. Put the coriander, mint, onion, and green chilies in a mixer grinder jar add a little water, and prepare a fine paste. After that, mix this fine paste with fresh curd and cream and some other aromatic spices, put the chicken in it, and keep it to marinate for 30 to 40 minutes. After 40 minutes, after the chicken is marinated, remove all the chicken pieces from the marinated paste on the grill pan in the oven, or the grill net and roast them well from both sides. After roasting the spices in peas, add the remaining marinade paste and give it a good boil, then add the grilled chicken pieces and prepare it with chopped coriander leaves after boiling. Garnished and served hot.

Ingredients
  • 800 gm – Chicken
  • 100 gm – Butter
  • 2 tablespoon – Cooking Oil
  • 1 – Onion Big Size (chopped)
  • 12 – Garlic Clove
  • 25 gm – Cashews
  • 250 gm – Yogurt
  • 250 gm – Fresh Cream
  • 1 teaspoon – Black Pepper (crushed)
  • 1 teaspoon – Whole Black Pepper
  • 4 – Green Cardamom
  • 6 – Clove
  • 4 – Bay Leaf
  • 1 inch – Cinnamon Stick 
  • 1 teaspoon – Salt (as per taste)
  • 1/3 teaspoon of garam Masala
  • 1 tablespoon of ginger Garlic Paste
  • 4 – Green Chily (as per taste)
  • 1 inch – Ginger
  • 25 gm – Cilantro (finely chopped)
  • 20 gm – Mint Lives
  • 1 – Lemon
  • 1 tablespoon – Fenugreek Leaves
  • 1 tablespoon – Chaat Masala

Afghani Chicken Recipe Instructions:

 

Step 1
First of all, we will wash 800 grams of fresh chicken thoroughly with fresh water and make long cuts on it with a sharp knife. Put 2 tablespoons of ginger-garlic paste in a big bowl and add one tablespoon of lemon juice as per taste. Mix salt well and keep aside for 20 minutes.
Step 2
Now we will wash green coriander and mint thoroughly inside the mixer grinder jar, add one chopped onion, 4 green chilies, and 25 grams of cashew nuts, garlic cloves, and ginger, and add half a cup of water and mix all these ingredients. Prepare a fine paste. And keep this paste aside.
Step 3
Now in a big bowl, put 250 grams of fresh curd, and 250 grams of fresh cream, add 1 teaspoon of garam masala, 1 teaspoon of chaat masala, 1 teaspoon of black pepper powder, and 1 tablespoon of fenugreek leaves by rubbing them on the palm, and mix well. Now add the finely ground paste of coriander and mint inside this bowl and mix everything well. Now put the marinated chicken inside it mix it well and keep it for 30 to 40 minutes.

Step 4

After the chicken is marinated, we will place a grill pan over the flame and put two tablespoons of butter inside it. When the butter starts melting, turn the flame to the middle and remove one piece of marinated chicken from the paste. Spread it out for roasting. Keep the marinated curd paste aside; it will be used to make puree later.
Step 5
After about 5 to 7 minutes, when the chicken starts getting roasted from one side inside the grill pan, turn each piece and roast it from the other side as well. It takes 20 minutes for the chicken to get roasted well on medium flame. After about 20 minutes of roasting the chicken pieces in the grill pan, a light golden color starts appearing. Now turn off the flame.
Step 6
Now we will make the puree of Chicken Afghani. For that, place a big non-stick pan over the flame and put two tablespoons of butter and 2 tablespoons of cooking oil in it. When the butter starts melting, put four green cardamoms, one teaspoon of whole black peppercorns, one inch of cinnamon. Add clove 4 bay leaves when these ingredients start crackling.
Step 7
Add the remaining marinade paste and let it boil while stirring continuously with a spoon. When the puree boils well, add the roast chicken pieces and 100 grams of boiled milk and mix well while stirring with the help of a spoon. Turn the flame to medium. Cover the pan with a plate and let it cook on a medium flame for 12 to 15 minutes. Stir the chicken with the help of a spoon after every 5 minutes.
Step 8
After about 12 to 15 minutes, our Afghani chicken Recipe will be ready. Turn off the flame and take out the chicken in a serving bowl. Garnish it with chopped coriander. Then our hot Afghani chicken is ready. You can serve it as Paratha Naan Lachha Paratha. Serve Rumali Roti with plain roti or jeera rice, it is delicious to eat.

1 – If you like the gravy of Afghani chicken, then you can add a little boiled milk to it and dilute it as per your choice.
2 – Due to the presence of cream and cashew nuts in the recipe, there is a slight sweetness in the gravy. If you want, you can increase the quantity of green chili or black pepper powder to make it spicy as per your choice.
3 – To create a smoky flavor inside Afghani chicken, when the chicken is roasted well inside the grill, then place a big burning raw coal inside it and cover it with a plate for 10 minutes. By doing this, a smoky flavor will be created inside it which will be pleasant to eat. Looks very tasty.
4 – Along with the Afghani chicken, you can add lemon juice, chopped coriander salt, and red chili over round rings of chopped onion, keep it in the fridge for some time, and serve. This onion looks very good when eaten with chicken Afghani.
5 – Kasuri fenugreek should be crushed on the palm and black pepper should always be crushed while making the recipe and should be added to the recipe. By doing this, the flavor of both these ingredients comes out very well in the recipe.
