Oats are a nutritious and vitamin-rich breakfast dish consumed across the world. Rich in nutrients and vitamins, oats are a powerhouse food. Its rich carbohydrates provide sustained energy to our body, making it an excellent breakfast option. Healthy oats are also rich in dietary fiber, especially beta-glucan, which effectively lowers cholesterol levels and improves our heart health, among other elements. This fiber content is also useful in improving our digestive system and helps in controlling our body’s blood sugar levels, making oats a very beneficial anytime and any form of healthy food for people suffering from diabetes. Oats are made from the seeds obtained from the oat plant. The oat plant is 100 to 120 centimeters tall. In India, oats crop is grown throughout the year but the most suitable time for farmers to sow oats crop is in October and November.

When the oat crop is ready after 60 days, it is harvested from the field and then finely chopped by machines and fed to the animals. Domestic animals like horses, donkeys, and camels, and milk-giving animals like cows, buffalo, and goats eat it with great fondness. It is said that eating this oat fodder also increases the milk production of milk-giving animals. The oat varieties cultivated in India are of the genera Avena sativa and Avena stericis. It is cultivated extensively in the northern region of India. The grains obtained from the oat crop are peeled using machines and the seeds are taken out. In big mills and factories, with the help of special machines, coarse, medium, fine, or flat oats of different sizes are prepared through a special process and are made fit for human consumption. Different types of oats are available in the market such as organic oats, quick oats, steel cut oats, only the method of cooking them differs. Various types of salty and sweet dishes are made from oats which are very tasty to eat. Salty dishes include idli, dosa, upma, uttapam, chilla, khichdi, omelet, etc. and sweet dishes include different types of biscuits, sweet oats, porridge, kheer, halwa, chivda, etc. Many such items are prepared. Along with this, various types of ready-to-eat oats packets are also available in the market which are ready to eat quickly by adding boiled water. If you have less time, you can use them too, but homemade oats are tastier and cheaper than packaged oats. The oats recipe that we are sharing with you today is made by finely chopping various vegetables and mixing them with rolled oats. We can also call it veg oats. To make oats, after coarsely grinding one cup of oats, add asafoetida, and cumin seeds in cooking oil, and after softening finely chopped onion, garlic, green chili, carrot, capsicum, beans, tomatoes, add oats and mix it with various aromatic spices like coriander, turmeric, salt, red chili, garam masala, add water in a certain proportion and cook it on a medium flame for 4 to 5 minutes by covering it. Once it is ready, garnish it with green coriander and lemon and serve hot. So let’s make this delicious healthy breakfast recipe.

Ingredients

 

  • 150 gm – Oats (rolled)
  • 2 tablespoons – Cooking Oil or Olive Oil
  • 1 pinch – Asafoetida
  • 1/2 teaspoon – Cumin Seeds
  • 1 tablespoon – Ginger Garlic Paste
  • 1 – Green Chili (finely chopped)
  • 1/2 cup – Onion (chopped)
  • 1/2 cup – Carrot (chopped)
  • 1/2 cup – Peas
  • 1/2 cup – Tomato (chopped)
  • 1/2 cup – Beans (chopped)
  • 1/2 teaspoon – Turmeric Powder
  • 1/2 teaspoon – Red Chili Powder
  • 1/2 teaspoon – Salt (as per taste)
  • 1/2 teaspoon – Garam Masala
  • 1/2 – Lemon (as per taste)
  • 1 tablespoon – Green Coriander Leaves (chopped)

For Roasted Masala

  • 1/2 teaspoon – Cumin Seeds
  • 1/2 teaspoon – Mustard Seeds
  • 1/2 teaspoon- Black Paper
  • 1 teaspoon – Coriander Seeds

Direction


Step 1
Place a non-stick pan on the flame and add 150 grams of rolled oats to it. Turn the flame to medium and roast them lightly while stirring continuously with a salted spoon for 1 minute. After the oats cool down, grind them lightly in a mixer grinder and make them slightly coarse.
Step 2
Wash all the vegetables with clean water and chop them. For example, finely chop the onion, finely chop the carrot, finely chop the beans, finely chop the tomatoes, and finely chop the green coriander as well.
Step 3
Now place a small non-stick pan on top of the wok and put one teaspoon coriander seeds, half teaspoon cumin seeds, half teaspoon black pepper seeds, and half teaspoon mustard seeds in it and roast them on low flame while stirring occasionally. When a mild aroma starts coming from these spices and they are lightly roasted, turn off the flame and after the spices cool down, grind them finely in a mixer grinder jar.
Step 4
Now we will prepare to make oats. For that, place a large non-stick pan on the flame and put two tablespoons of cooking oil in it. When the oil is heated well, put a pinch of asafoetida and half a teaspoon of cumin seeds. When the cumin seeds start crackling, put chopped onion in it and make it slightly soft while stirring with a spoon. After that, put one tablespoon of ginger-garlic paste and chopped green chilies in it and stir continuously with a slotted spoon.

Step 5
After stirring continuously for about 30 seconds with a spoon, put chopped tomatoes in the pan and make them soft by stirring continuously for about 1 minute. After the tomatoes become soft, put chopped beans, carrots, and peas in the pan stir with a spoon, and mix them all. After that, add salt, turmeric powder, red chili powder, and one and a half teaspoon of roasted fine masala as per taste in the pan and mix them well after that pour 4 cups of water into it.
Step 6
When the water starts boiling, add roasted oats little by little into the water and mix continuously add all the oats while mixing. When the oats are well mixed with other ingredients in the pan, then after slowing down the flame, cover it with a lid and let it cook for about 1 minute.
Step 7
After 1 minute, remove the lid and see the oats slowly thicken. While stirring with a spoon, when the water of the oats gets cooked and thickens, turn off the flame. Add half a teaspoon of garam masala, lemon juice as per taste, and one tablespoon of butter to the oats and mix them well. Take out the oats in a serving bowl and garnish them with finely chopped coriander. So our delicious healthy Oats are ready, serve it hot.

Tips And Notes


1 – When the water starts boiling after adding vegetables and spices and then while adding oats, we should keep in mind that we should keep stirring it quickly with a slotted spoon and keep adding it little by little, if not mixed fast then oats will form lumps.
2 – You can make oats by adding any vegetable of your choice like capsicum, broccoli, sweet corn, etc. You can also add small pieces of paneer to oats after frying them and it tastes good. You must try this.
3 – After the oats are ready, you should add a tempering of Desi Ghee, mustard seeds, curry leaves, and red chilies on it. By doing this, the garnishing of oats becomes very good.
4 – Oats should be eaten hot. When cooled, oats become hard. If your oats have become hard, you can dilute them according to your preference by adding a little salt to hot boiled water.
