In India, besides being a delicious dessert, Puran Poli symbolizes Maharashtrian ancient tradition, family togetherness, and great festivals like Gudi Padwa, Holi, Diwali, and Ganesh Chaturthi. Apart from these festivals, this dish is also made on auspicious occasions like weddings and religious ceremonies. Sharing the kitchen with the elders of the house to make Puran Poli not only increases the sweet cravings but also increases the feeling of belonging to your community and family, as every bite of Puran Poli prepared by grandmothers and mothers is filled with love and tradition, making it a pleasant experience to eat. That is why in Indian homes all the members, young and old, sit together at the dining table and eat this dish, thus promoting the feeling of love and unity of the family. The elders of Maharashtra say that the origin of Puran Poli is linked to the ancient Indian tradition and belief of offering Bhog Prasad to the deities during festivals and religious ceremonies.
Puran Poli is a sweet dish and part of the sacred Bhog Prasad offered to Lord Shri Ganesh Ji after Aarti during religious festivals celebrated across India along with Maharashtra. Puran Poli is a type of sweet flatbread with a delicate, flaky exterior made from wheat flour and maida, with a sweet, aromatic filling called “puran” inside. The puran stuffing consists of a harmonious blend of yellow chana dal (split Bengal gram), jaggery (unrefined cane sugar), and aromatic spices like fennel powder, ginger powder, green cardamom powder, and saffron. This stuffing not only provides a rich taste but also gives a breathtaking aroma that fills the entire kitchen while cooking, which increases the excitement of family members and guests invited to the house to eat. The process of making Puran Poli is a traditional sacred art passed down from generations. It begins with the careful preparation of the Puran when we boil the chana dal till it becomes soft, and after boiling, we mash it finely.
Then finely ground jaggery is added to the dal and the mixture of both is cooked on a low flame till it thickens, which gives the perfect balance of sweet stuffing. The addition of ground green cardamom powder and saffron gives an aromatic and delicious flavor, After this, mix chana dal stuffing with flour and refined flour in equal quantities and make balls of dough, roll them with a rolling pin, fill them inside and roll out round paratha, apply desi ghee on a non-stick pan and fry it on both the sides by turning it till it turns golden. Once ready, serve it hot with melted desi ghee or mango pickle or raw mango and sweet long vegetables.

Puran Poli Ingredients:


For Stuffing

  • 200 gm – Chana dal (yellow)
  • 200 gm – Jaggery (ground)
  • 10 – Green cardamon powder
  • 1 pinch – Saffron
  • Water – As per need

For Paratha (Outer cover)

  • 250 gm – Wheat flour
  • 250 gm – Maida (fine flour)
  • 1/2 teaspoon – Salt
  • 200 gm – Desi ghee
  • Water – As per need

Step 1

First of all, wash 200 grams of gram lentils two or three times with clean water and soak them in water for at least 2 hours. After 2 hours, remove the gram lentils from the water and put them in a pressure cooker, add 600 grams of clean water, and boil the lentils for three or four whistles.
Step 2
After three whistles, let the pressure of the pressure cooker release on its own. After that, remove the lid and take out the chana dal with a spoon and press it with your finger. If it has melted, then we will drain its water and keep it aside to cool down. If our Bengal gram dal has not cooked yet, then keep it on the flame for some more time and cook it till it cooks.
Step 3
When the lentils cool down completely, put them in a grinder jar add 200 grams of jaggery to the jar, and grind it. When the chana dal and jaggery are finely ground, place a non-stick pan over the flame and pour one tablespoon of desi ghee into it. When the desi ghee is heated and melts well, pour the ground dal and jaggery into it and dry the dal by stirring with a flat spoon. It takes about 10 minutes for the dal to dry on a slow flame.

When the chana dal is completely dry, turn off the flame and add half a teaspoon of ginger powder, half a teaspoon of fennel powder, and a pinch of saffron into it mix it well and keep it aside to cool.

Now for Puran Poli Paratha, we will take 250 gms wheat flour and 250 gms refined flour in equal quantities on a big plate and sieve it in a fine iron sieve add 1/2 tsp salt and mix it and add water little by little and knead it well and make it soft. Knead the dough just like paratha dough cover it with a cotton cloth and keep it for 15 minutes.
Step 6
After keeping the dough aside for 15 minutes, we will make paratha-sized round balls from the dough. We will also make balls of the chana dal stuffing of the same size. Our dough balls and stuffing balls should be of the same size. Now make a bowl shape by pressing the dough ball with the help of a thumb and putting the gram lentil stuffing ball inside it pressing it with the thumb inside the dough ball and closing it from the top. Exactly as shown in the direction picture.
Step 7
In the same way, prepare the remaining dough into balls and fill them with stuffing. Now we will place a non-stick pan on the flame and take one of the balls that we have prepared by filling the stuffing and place the side from which we have closed the ball down on the rolling board and roll it in a round shape with the help of a rolling pin.
Step 8
After rolling the paratha in a round shape, we will put on the pan placed on the flame and let it roast slightly from one side. When it is lightly roasted, we will flip it with the help of tongs and after adding some ghee, we will flip it and press it slightly with a flat spoon and roast it. By pressing the paratha, we will turn it from the other side as well and roast it till it becomes golden. By flipping it from both sides, we will roast the paratha.

When our puran poli gets roasted brown from both sides on a slow flame, we will take it out on a plate. In the same way, we will roll all the dough balls roast them from both sides, and bake them. So here is our delicious sweet Maharashtrian dish Puran Poli ready. Serve it hot.

Tips And Note

 

1 – If you use gram lentils after soaking them overnight, your puran poli stuffing will be very tasty. The lentils should be soaked for at least three to four hours.
2 – While kneading the dough for Puran Poli, if the amount of water in your dough has increased, then you can make it perfect by adding some more flour to it.
3 – While kneading the dough for puran poli and keeping it aside for 15 minutes, apply a little oil on it and cover it with a cotton cloth. Applying oil will prevent air from coming on it and it will make perfect balls.
4 – You can eat puran poli with melted desi ghee, raw mango, and sweet and sour methi vegetables or anything else, but it is also very tasty to eat with hot milk, you must try it.
