Creamy Rasta Pasta Ingredients:

 

200 grams – Penne or Fusilli pasta
1 tablespoon – Olive oil
1 small onion (chopped)
4 garlic cloves (chopped)
1 medium bell pepper (chopped)
1 small tomato (chopped)
1 teaspoon – Jerk seasoning
1/2 teaspoon – Dried thyme
1 can (14 ounces) coconut milk
1/2 teaspoon – Salt (to taste)
1/2 teaspoon – Black pepper
Fresh parsley or coriander, chopped (optional)
1/2 teaspoon – Red pepper flakes for garnish
1/2 teaspoon – Oregano for garnish

Creamy Rasta Pasta Instructions:

 

Step 1
First, wash the pasta with clean water and put it to a boil in about 700 grams of water also add 2 tablespoons of refined oil inside. Keep in mind that the pasta does not get overcooked. We will boil the pasta on medium flame.
Step 2
It takes 4 to 5 minutes for the pasta to boil. After about 5 minutes, try mashing the pasta a little with your fingers. If the pasta is mashing well, it means that our pasta is boiled. Then we will turn off the gas and let it cool. Drain the water in a steel sieve and keep the pasta aside.
Step 3
Heat olive oil on medium flame in a large pan or wok. Add onion and garlic and sauté for 2-3 minutes until soft. Add capsicum and tomatoes to the pan and saute for 2-3 minutes until they become soft.
Step 4
Add jerk seasoning and thyme and cook for another minute. Add coconut milk to the pan and mix well. Bring the mixture to a low flame and cook for 5-7 minutes until the sauce thickens a little. Season the sauce by adding salt and pepper to taste.
Step 5
Now you need to add the boiled pasta to the pan and toss to coat it evenly with the sauce. Serve the pasta hot, and garnish with chopped fresh parsley or coriander if desired. Tips and Notes


1 –
While boiling the pasta, add two teaspoons of cooking oil to it. Adding oil prevents the pasta from sticking to each other.

2 – When the water starts boiling while boiling the pasta, the flame should be reduced to medium and while cooking the pasta, make sure that the pasta does not get overcooked. As soon as the pasta becomes soft, remove it from the flame.
3 – All the ingredients added to the pasta should be fresh. Especially use fresh cream. If you do not get fresh cream, use canned cream. Fresh cream gives a very good taste to the recipe.
