This lamb curry prepared with aromatic spices represents the essence of the rich culinary heritage of the Kashmiri region, with its wonderful aroma and delicious taste that attracts everyone to it. “Rogan Josh” is a Persian word, in which “Rogan” means the lubrication of oil or clarified butter and “Josh” means bright red, heat or passion.
True to its name, Rogan Mutton Josh boasts of a spicy aromatic taste. This dish is cooked in ghee or oil, which traditionally has a bright red colour from dried Kashmiri red chillies and a natural herb called Ratanjot. What makes this dish so appealing is the harmonious balance of all the spices without using too many spices, giving it a depth of flavour that the eater cannot easily forget.
The main part of this aromatic delicacy is tender mutton or lamb, which is cooked for a long time on low flame in a balanced blend of fragrant spices in the lubrication of ghee oil.
All the spices along with some whole spices like cardamom, cloves and cinnamon, ground fennel and ginger powder are carefully roasted and cooked on low flame with curd, which gives it a delicious delicate aromatic taste.
The tempering of degi red chilli and ratan jot in desi ghee makes this dish very attractive. This tasty dish is usually served with roti, naan, rumali roti, jeera rice, or traditionally made Kashmiri roti, all these types of rotis with which the delicious curry gets fully absorbed and gives a rich taste.

Mutton Rogan Josh Ingredients:

 

  • 1 kg – Bone-in Mutton
  • 200 gm – Mustard Oil
  • 2 – Bay Leaves
  • 6 – Green Cardamoms
  • 4 – Black Cardamoms
  • 1 inch – Cinnamon Stick
  • 6 – Cloves
  • 1 inch – Mace
  • 1/2 – Nutmeg
  • 600 gm – Curd
  • 2 pinches –  asafoetida
  • 2 teaspoons – Fennel Powder
  • 1 teaspoon – Dry Ginger Powder
  • 2 teaspoons –  Degi Mirch (for colour)
  • 1 teaspoon – Cumin Powder
  • 1 teaspoon – Red Chilli Powder (as per taste)
  • 1 teaspoon – Salt (as per taste)
  • 1 teaspoon – Garam Masala

For Garnishing

  • 4 tablespoons – Desi Ghee
  • 2 inches – Ratan Jot
  • 1 tablespoon – Green Coriander (chopped)
  • 2 – Green Chilli (chopped)

Mutton Rogan Josh Direction:

 

Step 1
First, place a large vessel with a heavy bottom on the flame pour 200 grams of mustard oil in it and heat it well till it starts smoking and its smoke comes out. When the oil is heated well and smoking, turn off the flame and let it cool down. When the oil becomes slightly hot again, add whole spices like two bay leaves, cinnamon, cloves, green cardamom, and mace by breaking them with your hands, crush big black cardamom and add it, break nutmeg and add it and let these spices crackle.

When the whole spices crackle, add the mutton pieces to it and fry it well for 7 to 8 minutes while stirring it well on high flame with the help of a spoon. The colour will change after frying the mutton for 7 to 8 minutes on a high flame. Slow down the flame put curd in a large bowl and beat it well. Add all the ground spices in it – two teaspoons fennel powder, two pinches of asafoetida, one and a half teaspoon dry ginger powder, two teaspoons red chilli Kashmiri powder, one teaspoon cumin powder, one teaspoon red chilli powder, half teaspoon garam masala, one teaspoon salt. Put all these in the curd beat it well and mix.

Step 3
If your curd is too thick then add some water to it and mix all the spices well pour this mixture into the mutton kept on the flame and turn the flame to high and cook for 6 to 7 minutes while mixing well. After roasting the mutton on high flame for 7 to 8 minutes, it will release its oil, so we have to pour boiled water inside it. Pour enough water so that the water remains half an inch below the mutton. The mutton should not be completely submerged. Because there is not much gravy or fibre in Mutton Rogan Josh, so make sure we don’t add too much water.

Step 4
After adding water, we will mix the mutton well and after slowing down the flame, we will cover it with a lid and let the mutton cook slowly on low flame. It takes approximately 45 minutes to 1 hour for the mutton to cook. After every 10 minutes, we will remove the lid turn the mutton and cover it again. How long the mutton will take to cook depends on the quality of the mutton. If the mutton is of good quality then it should be cooked within 45 minutes to one hour.

Step 5
Stir it every 10-15 minutes and after about 1 hour we will lift the mutton with a spoon and press it with our fingers, if our mutton is well cooked and is separating from the bone, If the mutton is raw, then add some hot boiling water into it and cook it on slow flame till it melts. When it is cooked, then we will turn off the flame, Try eating a little gravy, if there is less salt in it then add salt as per taste and add 1 tsp garam masala and mix well. And now we will make Tadka for Mutton Rogan Josh.

To make the Tadka, we will place a small non-stick pan on the flame and pour four tablespoons of Desi Ghee into it. When the ghee melts well, put small pieces of Ratan Jot in it and slow down the flame. After frying for two minutes on low flame, when the Ratan Jot leaves its colour, turn off the flame filter the Ghee through an iron sieve and pour it into the Mutton Rogan Josh.

Step 7
Mix it well take it out in a serving bowl and garnish it with finely chopped coriander leaves and finely chopped green chillies. Our delicious and delicious Mutton Rogan Josh is ready. Serve it hot. You can eat it with roti, naan, paratha or boiled rice. It tastes very delicious.

Tips And Notes

 

1 – Traditionally, onion is not used in Mutton Rogan Josh, but if you want to keep the gravy thick, then chop onion finely, fry it golden and caramelize it, grind it with curd and add it 10 minutes before Mutton Rogan Josh is ready, mix it and let it cook. These tips will make your mutton gravy thick.
2 – After the Mutton Rogan Josh is ready if you feel that your gravy is less or thick, then add boiled water into it and boil it a little. Always add boiled water and never add cold water. Adding cold water stops the cooking process of the mutton. Instead of boiling water, you can also heat mutton stock and add it.
3 – You can also use fresh ginger paste in mutton. If you are adding fresh ginger paste then do not add sauteed powder. Also, keep in mind that all the spices should be pure and fresh. Pure fresh spices enhance the taste of your recipe.
