This is why eating it is beneficial for us. This sweet is traditionally made and distributed to each other on the Punjabi festivals Lohri and Makar Sankranti. On these festivals, making Til Bugga and feeding it to each other as a gift is also considered very auspicious. To make Til Bugga, white sesame seeds are cleaned, lightly roasted on medium flame, and then coarsely ground. After that, mawa is roasted and these ground sesame seeds are mixed inside it and a certain amount of powdered sugar is added. Roasted dry fruits are chopped and green cardamom powder is mixed well desi ghee is applied lightly on the hands and it is shaped into the desired shape of laddu or barfi. Til Bugga Sweet Ingredients: 

 

  • 500 gm Til, white sesame seeds
  • 600 gm Mawa
  • 400 gm Suger Powder
  • 20 Pistachios, coarsely chopped
  • 2 tablespoons desi Ghee
  • 1/2 teaspoon Green Cardamom Powder
  • 20 Almond, coarsely chopped
  • 15 Cashew, coarsely chopped


Til Bugga Sweet Instructions:



Step 1

First of all, place a non-stick large pan over the flame, clean the white sesame seeds, put them in it, and roast them on a slow flame while stirring with a spoon. We do not have to roast the sesame seeds too much, just let their color change slightly and if they swell, it means that our sesame seeds have been roasted. Be careful not to over-roast the sesame seeds while roasting, otherwise their taste will become bitter.
Step 2
Sesame seeds have to be roasted while stirring continuously in the pan. When the sesame seeds are roasted, take them out on a plate, cool them, and take out two tablespoons of sesame seeds separately put the remaining sesame seeds in a mixer grinder jar and grind them one by one, not too finely. Roughly chop the almonds, roughly chop the cashews, and roughly chop the pistachios. Grind the green cardamom and make a powder.
Step 3
Grate 600 grams of mawa in a grater place a deep non-stick pan over the flame put the mawa in it and roast it on medium flame while stirring with a spoon. Keep stirring the mawa continuously otherwise, it will burn in the pan. It takes 5 to 7 minutes for the mawa to be lightly roasted on medium flame. Keep stirring the mawa continuously.
Step 4
When the male gets roasted, it will stop sticking to the sides of the pan and its color will also change slightly when the mawa gets roasted. Then turn off the flame. Do not roast the mawa too much.
Step 5
Take out the roasted mawa in a big bowl and put the ground sesame seeds inside it add sugar powder and put some chopped dry fruits inside, keep some for garnishing, and also add green cardamom powder. After pouring, wash hands thoroughly and mix with hands. Since the tawa is hot, the binding of all the ingredients takes place well.
Step 6
Now if you want to make them in the shape of laddus, then press them into round laddus with the help of your hands and keep them on a plate, garnish with some chopped dry fruits on top, and if you want to make them in the shape of barfi. If so, heat some ghee in the bottom of a big track and apply it on all sides, put all the sesame seeds in a tray, apply a little ghee on your hands, and spread the essence.
Step 7
Add chopped dry fruits on top and press the dry fruits lightly with your hands. Within one and a half to two hours, it will come in its perfect shape, then with the help of a knife, cut it into square pieces and take it out on a serving plate. Our Til Bugga Sweet is ready. You can eat it and serve it whenever you want.

Tips And Notes

 

1 –To make Til Bugga, one should always use fresh white sesame seeds. Sometimes old sesame seeds are found in the market and they become bitter when roasted and the recipe gets spoiled.
2 – After roasting, white sesame seeds should be cooled and then ground. When hot sesame seeds are ground, they release their oil.
3 –Sometimes the mawa cools down and when we make laddus by adding sesame seeds and mawa inside it, they do not stick. When this happens, very little hot milk should be mixed inside the mawa and sesame seeds.
4 – Inside Til Bugga, you can add or skip any dry fruits as per your wish like raisins, chironji, etc. You can also add inside Til Bugga, these dry fruits also enhance its taste.
