In India, during the nine days of Navratri, at the end of the fast and worship of Maa Durga, after the worship of small girls, suji ka halwa, black gram and puri are traditionally made and fed as food in all Hindu homes.

In the Jagrata of Maa Durga held during the days of Navratri, suji ka halwa (semolina pudding) and black gram prasad are also made and distributed to everyone. Being made as prasad in the puja, people eat it with great gusto. Fiber is found in abundance in semolina, due to which it keeps our digestive system healthy.

Semolina also helps in increasing our immunity. After eating semolina pudding kheer or any dish made from it, you can stay without food for a long time. In this recipe, semolina and ghee are taken in equal quantity and slowly roasted on low flame till golden brown.

After that, double the quantity of sugar syrup is prepared and mixed in it and halwa is prepared and garnished with dry fruits like almonds, cashews and raisins. So let’s make this delicious sweet dish.

Suji Ka Halwa Recipe Ingredients:

 

  • 100 – gm Suji (semolina)
  • 100 – gm Desi Ghee
  • 200 – gm Sugar
  • 500 – gm Fresh Water
  • 1/2 – teaspoon Green Cardamom Powder
  • 25 – gm Almonds (chopped)
  • 25 – gm Cashews
  • 25 – gm Raisins
  • 10 gm – Pistachio

Suji Ka Halwa Recipe Instructions:

 

Step 1 
First, we will filter semolina in a fine iron sieve so that there is no worm or dirt in it. Coarsely chopped almonds. Finely crush the green cardamom and separate its skins. Cut off the stem of the raisins and clean them. Also, chop pistachios.
Step 2
Now put a nonstick deep pan on top of the flame and add 100 grams of pure desi ghee to it, when it melts then put 100 grams of semolina in it and roast the semolina stirring it with a spoon over the medium flame. When the boil starts coming in the ghee, we will slow the flame and roast the semolina while stirring continuously.

Step 3
The semolina takes 25 to 30 minutes to get nicely roasted and golden. When the semolina starts golden rost, then fragrance will start coming inside it and ghee will start coming up from the sides of the pan. When the semolina turns golden well, add chopped almonds cashews, and raisins inside it, and while stirring slowly, turn off the plane after about 30 seconds.
Step 4
Even after closing the flame, keep stirring the semolina slowly for 1 minute because it is very hot inside, and our dry fruits can get burnt. All the dry fruits will not be put inside the halwa some dry fruits will be kept for garnish. Now we will prepare sugar syrup, for that we will keep a deep nonstick pan on the flame.
Step 5
Put 200 grams of sugar inside the pan add 500 grams of water and let it boil while stirring on medium flame. When sugar syrup comes to a boil, add 1 serving spoonful of milk and keep stirring the sugar syrup. Adding milk will clean the dirt inside our sugar. We will throw away the dirt that comes on top of the syrup. close the flame. Will add green cardamom powder inside the sugar syrup and mix it.
Step 6
Now we will put the roast semolina on the flame and put the sugar syrup inside it high the flame and keep stirring it slowly. Sugar syrup will start boiling, keep stirring it continuously. When the boil starts to grow fast, then flame will make it medium and keep stirring it. Slowly when all the water dries up and the halwa becomes slightly thick, then turn off the flame.
Step 7
We do not have to thicken the halwa too much because the halwa is thick even when it cools down. Take out the halwa in a serving bowl and garnish with Cashews, Almonds, Raisins, and Pistachios, Now our Suji Ka Halwa Recipe is ready, serve hot. You can also eat it with paratha and puri it looks very tasty.

Tips And Notes

 

1 – When semolina pudding is ready, then before turning off the flame, add one or two spoons of desi ghee in it and mix it. By doing this, the softness of the halwa is maintained and it tastes good to eat.
2 – After the semolina is roasted, when we add it to the sugar syrup, it should not be too tight while cooking, because the halwa becomes tight even after it cools down.
3 – The flame should slow on while roasting the semolina. Sugar syrup should be added only after the semolina turns golden brown. Otherwise, the color of our halwa remains white and it is not pleasant to see and eat.
