This delicious dish is called by different names in different regions, such as Paddu in Karnataka, Ponganalu in Andhra Pradesh, Paniyaram in Tamil Nadu, and Appe in Marathi. It’s a popular South Indian street food snack readily available in markets, on street corners, and in restaurants everywhere.

Children and adults alike love this snack, and you can even pack it in your kids’ lunchboxes. This Marathi dish is made in two ways: savory and sweet. We’ll share the savory recipe for this dish. To prepare this dish, yogurt is mixed with thick semolina and finely chopped vegetables like capsicum, carrots, onions, and beans.

A special tempering is then added by frying mustard seeds and curry leaves in oil, and everything is mixed well. A special molded pan has round molds inside. Pour the prepared paste into these molds and fry them over low heat, turning them occasionally, until golden brown. Once ready, serve hot with coconut chutney and sambar. Appe South Indian Dish Ingredients:

 

  • 2 cup Rawa, Semolina
  • 1 cup Curd
  • 1/2 cup Onion, finely chopped
  • 1/2 cup Carrot, finely chopped
  • 1/2 cup Capsicum, finely chopped
  • 1 tablespoon Beans, finely chopped
  • 1 Green Chili, finely chopped
  • 1/2 teaspoon Mustard seeds, black
  • 1/2 teaspoon Black Pepper, crushed
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Red Chili Powder
  • 1 Eno Pouch, fruit salt
  • 1 tablespoon Green Coriander Leaves, finely chopped
  • 12 Curry Leaves, Chopped
  • 200 gm Cooking Oil

Appe South Indian Dish Instructions:

 

Step 1
First, add two cups of semolina, one cup of curd, and one cup of water in a big bowl and mix well. And keep covered for 15 minutes. After 15 minutes, add one more cup of water and mix well and the consistency of this batter will be like idli batter.

Now inside this batter, add salt as per the test, red chili powder, 1/2 teaspoon black pepper, and half a spoon of Eno, and mix everything well. Now add finely chopped vegetables like capsicum, onion, carrot, beans, green chilies, and chopped coriander and mix well.
Step 2
Now place the pan for making appe, called appe mold pan, over the flame and pour a little cooking oil inside all the molds. When the mold pan becomes hot, pour a little mixer inside it with the help of a tablespoon. Do not fill the molds, keep a little more than half. Because it swells a bit after being roasted, if we fill the mixer too much then it will swell and come out of the mold.

Step 3
After filling the mixer in the pan, pour a little oil on the mixer cover the pan with a lid, and leave it to roast on slow flame for one and a half to 2 minutes. After one and a half to 2 minutes, remove the lid of the pan and see that our appe will swell a little and get larger and they will also get roasted a little.

Now turn all the appas slowly with the help of a fork. Pour some cooking oil on all the apps cover the pan with a lid and leave it to roast for one and a half to two minutes. Keep the flame slow.
Step 4
After two minutes, remove the lid of the pan and see that our appes will get roasted well from the other side also. Similarly, you will roast all the appes by turning them upside down. It takes three-four minutes for one set of appe to be roasted properly. The rest of the batter will be prepared and roasted in the same manner.

So, our delicious Appe South Indian dish is ready, you can serve it with hot fresh coconut chutney or coriander mint green chutney and tomato sauce.

Tips And Notes

1 – After adding chopped vegetables to the semolina batter, you should add eno just before pouring the batter inside the mold pan. After mixing eno, do not keep the batter for too long otherwise it will not rise while preparing the dish.
2 – To make an apple, you can add any vegetable of your choice in the rava batter or you can skip the one which you don’t like. You can also add freshly grated raw coconut in the rava batter, this also makes the dish delicious.
3 – The batter should not be filled till the top is inside the molds of the mold pan because eno is mixed inside the rava batter. If we fill the molds till the top then they get roasted and come out of the molds and the shape of the appe gets spoiled.
4 – To make appe, put one spoon of semolina batter inside the mold pan and add half a spoonful of green chutney and then pour semolina batter on top of it, cover, it, and roast. By doing this, the chutney will be stuffed inside the appe and you can serve it to children. If you keep it in a lunch box or take it while traveling, then you do not need to carry chutney with you, it tastes very tasty.
