When made dry it is eaten as a starter snack and when made with gravy it is eaten with pulao and noodles. It is a famous street food which children like very much. To make it capsicum, cabbage, cauliflower and carrot are grated, cornflour and maida (fine flour) are added for binding and balls are made, then they are fried.

After that garlic, onion, capsicum, ginger and cornflour are added and gravy is prepared with vinegar and sauce, then these Manchurian balls are added to it and served with pulao and noodles.

Veg Manchurian Gravy Recipe Ingredients: 

 

For Manchurian Balls

  • 1 cup – Cauliflower (grated)
  • 1 cup – Cabbage (grated)
  • 1 cup – Carrot (grated)
  • 1/2 cup – Spring onion (finely chopped)
  • 1 cup – Capsicum (finely chopped)
  • 12 to 15 – French beans (finely chopped)
  • 4 – Green chilies  (chopped)
  • 1 inch – Ginger, peeled (finely chopped)
  • 2 tablespoons – Coriander leaves, chopped
  • 1 tsp – Black pepper (crushed)
  • 1 cup – Bread Crumbs
  • 1 tablespoon – Salt (as per taste)
  • 3 tablespoons – Refined flour
  • 4 tablespoons – Cornstarch
  • 500 gm – Oil for frying

For Gravy

  • 1 tbsp Oil
  • 6 –  Garlic cloves (chopped)
  • ½ inch – Ginger (chopped)
  • 2 –  Green chilies  (chopped)
  • 2 – tablespoons Spring onion (white part, chopped)
  • ½ tablespoon –  Tender Coriander stem (finely chopped)
  • ¼ tablespoon – Vinegar
  • ½ tablespoon – Dark Soy sauce
  • 1 tablespoon – Red chili powder
  • 2 tablespoons – Cornstarch
  • ½ inch Ginger, (finely chopped)
  • 2 Green chilies (finely chopped)

Veg Manchurian Gravy Recipe Instructions:


Step 1
First of all, we will put our vegetables, such as capsicum, cabbage, cauliflower, carrot, beans, spring onion, bread crumbs, green coriander leaves, chopped ginger, and chopped green chili, in a big glass bowl. We will also add Refined flour, Cornstarch, 1/4 tbsp salt, and black paper and mix well. Don’t add too much salt; otherwise, the vegetables will leave water.

This mixer will mix well and make small balls that can be pressed into the fist. You can make small or big balls in the desired shape. When all the balls are ready, place a nonstick pan on the flame and put it on cooking oil.

Step 3
When the cooking oil becomes hot, we will put a few balls in it and fry while stirring slowly till they become light golden crisp. Keep the flame slow. Fry all Manchurian balls in this order.
Step 4
Now we will prepare our Manchurian gravy. Dissolve one teaspoon of red chili powder in one-fourth cup of water. Keep one and a half teaspoons of cornstarch dissolved in a cup of water. Now we will put a thin iron pan on the flame. One should always use a thin iron pan for Chinese cuisine because Chinese cuisine is always cooked at high flame.
Step 5
Place an iron pan over the flame and pour one tbsp of cooking oil into it. When the cooking oil becomes hot, put garlic in it and keep stirring till it becomes golden. After the garlic turns golden, add chopped onion and capsicum and stir it for 1 minute. Add 1 tsp chopped ginger. Add one serving spoon of soya sauce and half a serving spoon of vinegar and stir. Add paste made of red chili and water, Also add 1 serving spoon tomato ketchup and stir.
Step 6
Slow down the flame Which cornstarch solution will you pour slowly? Mix well before adding cornstarch, it tends to settle down in water. You will also get a cup of water. When it starts to thicken a bit while cooking a boil comes. So we will check a little around whether the salt or sourness is okay, according to you, we can increase or decrease soy sauce, vinegar, or salt.

If our gravy is a bit thick, then we will boil it by adding a little hot water and if it is thin, then we will add a little bit of cornstarch solution. After the gravy starts boiling, turn off the flame and add Manchurian balls to the gravy.

Tips And Notes


1 – Bread crumbs absorb the extra moisture from our vegetables and become crisp in Manchurian balls. That’s why add breadcrumbs while making Manchurian balls.
2 – While making Manchurian balls, always use fresh vegetables and not frozen ones. Using frozen vegetables leaves out the moisture and our balls are not made properly and remain loose.
3 – While cooking any Chinese cuisine, always use a thin iron bottom pan because Chinese cuisine is always cooked on high flame. But you also need to know when to speed up the flame and when to slow it down.
4 – After the gravy is made, add half a teaspoon of sugar to it, the sour and spicy taste of the gravy is very good to eat.
