Sheer Khurma Recipe is a delicious sweet dish full of dry fruits made in every Muslim household on big festivals like Eid Mubarak. This sweet aromatic delicious dish is a very tasty dish made in Afghanistan, Pakistan, Dubai, Bangladesh, and many other countries as well as in India, especially on the occasion of Eid. Sheer Khurma, the mouth-watering name, is a traditionally flavourful and delicious dessert, a favorite sweet dish made by the Muslim community in India on the auspicious occasion of Eid, trendy during Eid, the biggest festival of the Muslim community. This delicacy, which derives its name from the Persian word sheer meaning milk, and khurma meaning dates, means “milk with dates” Cooked together with other ingredients to form a sheer khurma, this sweet dish traditionally reflects the essence of the celebration of togetherness, symbolizing love and sweetness in our lives. Sheer Khurma is an ancient Persian delicacy, ancient French cuisine used milk and dates in abundance in various desserts.
Gradually, this special sweet recipe came to the Indian subcontinent and was adopted by the locals with changes in its taste and ingredients, and the changes evolved into the wonderful way we cherish it today. Since ancient times, this delicious sweet along with many other dishes has become a staple in Muslim households during Eid-ul-Fitr and Eid-ul-Adha, which respectively mark the end of the holy fasting month of Ramadan and the biggest celebration of mutual social love. Sheer Khurma is often prepared by the whole family, especially the elderly women of the house, in a special tradition that has been going on for generations, through which every family member who makes it adds his unique loving touch to it emotionally. In the Indian Muslim community, after fasting for the whole month, during the festival of Eid, this delicious Sheer Khurma is prepared in every household along with other dishes. The special guests who come to the house for Eid are served Sheer Khurma with great love. Along with this, a feeling of joy is felt by lovingly gifting Sheer Khurma to the houses of business and social acquaintances and other acquaintances. To make this delicious recipe, fine vermicelli is lightly roasted in ghee and then added to with boiled milk with mashed dates, and cooked till it becomes thick. After that, dry fruits roasted in ghee like pistachios, almonds, cashews, raisins, and saffron are also added to it and after adding sugar and green cardamom powder and mixing well, once it is ready, it is served hot or cold. So let’s make this delicious, sweet, and aromatic recipe.

Sheer Khurma Recipe Ingredients:

 

  • 100 gm – Vermicelli (seviyan)
  • 100 gm – Desi Ghee
  • 1 kg – Milk (full cream)
  • 15 – Dates
  • 25 gm – Almonds
  • 25 gm – Cashews
  • 25 gm – Raisins
  • 10 gm – Chironji
  • 10 gm – Melon seeds
  • 1 pinch – Saffron
  • 100 gm – Suger
  • 1/2 teaspoon – Green Cardamom Powder
  • 4 tablespoons – Condensed Milk
  • 2 tablespoons – Rose Water

Sheer Khurma Recipe Direction:


Step 1
Soak almonds, pistachios, and cashews in separate bowls of water for 2 hours. After soaking in water for 2 hours, rub the peels of almonds and pistachios on a cotton cloth finely chop the almonds and cashews, and keep them aside. Soak a pinch of saffron in four tablespoons of milk and grind green cardamom finely to make a powder. Remove the date stalks take out their seeds and chop them finely.
Step 2
Break the sevaiyan into 2-inch long pieces by hand place a non-stick pan on the flame and pour one tablespoon of Desi Ghee into it. When the Desi Ghee melts, slow down the flame put the sevaiyan in the pan, and lightly roast them while stirring with a slotted spoon. After roasting for about 2 minutes, the aroma will start coming from inside the sevaiyan, then we will turn off the flame and take out the sevaiyan on a plate.
Step 3
Now we should roast the dry fruits. Place a non-stick pan on the flame and put one tablespoon of desi ghee in it. When the ghee starts melting, put the chopped cashews and chopped almonds in it and lightly roast them on low flame while stirring with a spoon. It will take about 30 to 40 seconds to roast them. When the cashews and almonds are lightly roasted, turn off the flame and take them out on a plate.
Step 4
Now put half a tablespoon of Desi Ghee in this pan and slow the flame. When the ghee melts, put the chopped dates and roast it lightly for 30 seconds while stirring it with a spoon and turning off the flame. Now put the melon seeds in the same pan and roast them while stirring with a spoon. When the melon seeds are roasted, they will swell. When they are roasted, turn off the flame and take them out on a plate.

Step 5
Put 1 liter of full cream milk to boil in a non-stick saucepan. When the milk boils, reduce the flame and let the milk boil. Keep stirring the milk with a spoon in between. We have to let the milk simmer for about 5 minutes while stirring it continuously on a low flame.
Step 6
When the milk has been boiling for about 5 minutes, we will add the roasted vermicelli and all the roasted dates while continuously stirring with a spoon and let the milk cook. Keep the flame on slow and keep stirring the milk continuously with a slotted spoon.   
Step 7
After about 2 minutes, add half-roasted almonds, half-roasted cashews, half-chopped pistachios, and all the roasted melon seeds to the milk. It takes a total of 8-10 minutes for the milk to thicken after cooking. When the milk gradually thickens after cooking, add 4 tablespoons of sugar to it keep stirring, and keep the flame low. Add all the chironji and raisins as well after adding sugar, cook the milk for 2 minutes, and then turn off the flame.
Step 8
Now add four spoons of rose water, half a spoon of green cardamom powder, half a cup of condensed milk,  and the saffron soaked in the milk,k and mix all these things well.

Now take out the prepared sheer in a serving bowl and garnish it by adding the remaining dry fruits. Our delicious Sheer Khurma Recipe is ready. You can serve it hot as you choose or after cooling it in the fridge.
 

Tips And Notes  

1 – Nowadays, already roasted vermicelli is available in the market. If your vermicelli is roasted, it must be lightly roasted by adding ghee. If your vermicelli is not roasted but raw, cook it only after roasting it on slow flame until it turns brown.
2 – Some people also add mawa in sheer khurma but we have added condensed milk in our kheer, so we do not need to add mawa. If you still want to add mawa, then after roasting some mawa, once the sheer khurma is ready, you can grate it and add mawa.
3 – Sugar should be added very carefully in Sheer Khurma because dates are sweet and the condensed milk mixed in it is also very sweet. Add less sugar in the beginning and then check a little. If you feel that there is less sugar, you can add sugar as per your taste and cook later.
4 – After Sheer Khurma is cooked, it should not be kneaded too much because even after cooling down, Sheer Khurma becomes thick. 
5 – If you like to eat Sheer Khurma after cooling it, then keep it in a small clay bowl cool it inside the fridge, and serve it later. Sheer Khurma tastes very delicious with the aroma of the clay pot.
