Introduction – Hello friends, welcome to the Khana Khilana recipe blog. Today we will share with you an easy rice recipe. Veg Pulao Recipe was my mother’s favourite and she would often cook and serve it to us with great love.

This recipe is made by combining the old aromatic basmati rice with aromatic whole spices and some of your favourite vegetables like carrots, peas, cauliflower, paneer, beans, baby corn, capsicum etc.

The best part about this recipe is that you can add any vegetable of your choice to it.
This recipe is a variation of biryani, the only difference is that you add non-veg pieces in biryani and veg pulao with veg.

Whenever I am alone at home and I have to make something quickly, I prefer to make veg pulao. You can have veg pulao with dahi raita. It tastes very delicious and does not take much time to make. It is ready in a jiffy. Let’s make and eat.

Ingredients

 

 Veg Pulao Recipe Ingredients:

  • 200 gm – Old Basmati Rice
  • 2 cups – Onion big size
  • 1 cup – Capsicum
  • 1 cup – Carrot
  • 1 cup of beans
  • 1 cup – Baby Corn Slice
  • 1 cup – Cauliflower
  • 1 cup – Peas
  • 1 cup – Cheese
  • 1  – Potato Big size
  • 1 teaspoon – cumin seeds
  • 2 pinch – Asafoetida
  • 6 – Black cardamon
  • 4 – Green Cardamon
  • 4 – Cloves
  • 2 – Star Anis
  • 1 inch – Cinnamon
  • 1 tbsp – Black Paper(grains)
  • 1 tbsp – Salt (as per taste)
  • 4 tbsp – Cooking oil
  • 100 gm – Butter
  • 1 cup – Coriander Leaves (chopped)
  • 8 – Mint Leaves (chopped)
  • 1 cup – Cashew
  • 2 – green chili (chopped)

Veg Pulao Recipe Instructions:

Step 1
First, wash the basmati rice two or three times with clean water and soak it in water so that its extra starch is removed. Soak the rice for half an hour. Now we will cut all our vegetables in small cube sizes. Peel the potatoes, wash them well cut them into small sizes, and cut the paneer into the same size, we will fry both of them and boil the peas. Boil the baby corn after slicing it. Now all our vegetables are cut and ready, potatoes, paneer, and cashews are fried, and peas and baby corn are boiled.
Step 2
After soaking our rice for half an hour, we will boil it, keep more water so that the rice does not stick together, and squeeze a lemon in that water, add a little salt and big cardamom. At the time of boiling, keep stirring the rice slowly in between, and keep in mind that the rice should not become too boys. When our rice is boiled, we will filter it in a sieve so that its water comes out and take it out in a big vessel to cool down. Discard the big cardamoms, they are only for flavor and their flavor has entered the rice.
Step 3
Now we will shallow fry our vegetables, for that put butter in a pan and put it on the flame and when our oil starts heating up, then add asafoetida and cumin seeds inside it, when our cumin seeds start to crackle, So that, we will put green cardamom, cloves, cinnamon, star anis, by leaf, and keep stirring them slowly till they start to crackle. Then add chopped onion to it. Will add and keep stirring slowly, as soon as our onions become a little fond, then inside it, we will add the rest of our chopped vegetables like capsicum, beans, and carrots, and stir them slowly. Add salt along with it.
Step 4
We have to lightly soften all the vegetables, keeping in mind that the vegetables should not be overcooked, when our vegetables become soft, we will turn off the plane. We will now put our fried potatoes cheese and cashews inside them, and also add boiled baby and peas mix well and add salt according to the test.
Step 5
After mixing all the vegetables well, now we will spread this vegetable mixer in our rice and mix it slowly. Garnish with chopped coriander and mint leaves. So our Veg Pulao Recipe is ready. Before serving, heat a little in a pan or heat it in the oven. You can eat it with curd raita or any gravy of your choice.

Tips And Notes


1 – Whenever rice is used, it should be old, it should be good Basmati and while boiling, add as much water as possible so that it does not stick together.
2 – You can add any vegetable of your choice in this vegetable pulao like broccoli mushroom or any other vegetable that you eat.
3 – To save time, you can also use frozen vegetables in your veg pulao, which do not need to be boiled and can be used as is.

Ans: To cook in the cooker, we have to put the rice in the cooker after frying the spices and all the vegetables and after pouring enough water, the veg pulao is ready in the pressure cooker after two whistles.

Ans: By the way, only old basmati rice is good for making veg pulao, but you can use any other good type of rice, like Galaxy, Golden, Red Fort, and others.
Q: What is served with Veg Pulao?
Ans: Veg Pulao can be served with any of your favorite gravy or Dal, and Raita Papad and Salad can also be served with it.
