To make the recipe, good quality golden sela rice and Basmati rice are boiled by adding food color in water and some dry fruits like cashew nuts, almonds, pistachios, and cloves are lightly roasted in desi ghee and the boiled rice is cooked with sugar on medium flame. It is cooked by adding cardamom powder and saffron and it produces a fragrance that attracts everyone to eat it. Cutting cherries into two and garnishing them with roasted mawa further enhances its beauty and presentation. This delicious dish is liked by everyone, both children and adults, so let’s make this delicious sweet rice recipe.

Zarda Pulao Recipe Ingredients:
- 200 gm Rice, golden sela or galexy
- 2 service spoon Desi Ghee
- 150 gm SugerÂ
- 2 pinches of Orange Food Color
- 15 – 20 Almonds
- 15 – 20 Cashews
- 25-30 Raisins
- 1-inch Cinnamon
- 6 green Cardamoms
- 4 Clove
- 6 Cherry
- 100 gm Mawa, roasted
- 2 pinches of Saffron Leaves
- 1/2 cup Milk
Zarda Pulao Recipe Instructions:
Step 1
First of all, wash 200 grams of good quality golden sela rice carefully three times with clean water, taking care not to break the rice, and keep the rice soaked for 45 minutes. After soaking the rice for 45 minutes, we will place a big non-stick vessel on the gas pour 1.25 liter water inside it, and keep it to boil. When the water comes to a boil, we will put food color inside it, Carefully put the rice in boiling water. We will keep the flame on high and let the rice boil inside, after it boils we will slow down the flame.

It will take about 12 to 15 minutes for the rice to boil thoroughly. Check the rice by mashing it with your finger. When the rice is boiled well, take it out in an iron sieve and spread it on a plate. Take care that the rice does not stick to each other. The steam should be released well. Cut the whole cashew nuts into two pieces with a knife cut the almonds into thick pieces and cut the pistachios into two-three pieces each. Soak saffron threads in milk and keep them aside.

Tips And Notes
1 – In Jarda Pulao, you can keep more or less sugar as per your choice. However, this much sugar is appropriate for this much rice. If you want to eat less sugar, then you can increase or decrease it as per your choice.
2 – Golden Sela rice is best for making Zarda Pulao. If you do not have Golden Sela rice available then use good quality vegetable rice in its place. To make the recipe good, the rice needs to be of good quality.
3 – Every person’s way of making Zarda Pulao is different. Some people add dry fruits as per their choice and some people also use broken fruit cherries inside Zarda Pulao. If you want, you can add anything dry as per your choice. Fruits can be increased or decreased.
