In this recipe, bitter gourd is washed thoroughly, salted and kept for 45 minutes to 1 hour. By doing this, the bitterness of bitter gourd goes away, then it is prepared by frying it with chopped onions and aromatic spices and served. Karele Ki Sabji Recipe Ingredients:

 

  • 250 gm – Bitter Gourd
  • 300 gm – Onion (chopped lengthwise)
  • 1 – Raw Mango (grated)
  • 4 serving spoons – Cooking Oil (mustard)
  • 2 – Pinches Asafoetida
  • 1/2 teaspoon – cumin Seeds
  • 1 teaspoon – Coriander Powder
  • 1/3 teaspoon – turmeric powder
  • 1/2 teaspoon – Salt (as per taste)
  • 1/3 teaspoon – Red Chili Powder (as per taste)
  • 1/3 teaspoon – Amchur Powder (dried Mango Powder)
  • 2 – Green Chili (chopped)
  • 1/3 – Fennel Seeds
  • 1 tablespoon – Green Coriander Leaves (chopped)

Karele Ki Sabji Recipe Instructions:

 

Step 1
First, peel the bitter gourd after washing it well. Cut it into round slices and sprinkle half a teaspoon of salt on them. Mix well and let it sit for half an hour to an hour. This helps remove the bitterness. Chop the onion lengthwise and the green chilies finely. Wash, peel, and grate the raw mangoes.
Step 2
After an hour, rinse the bitter gourd slices well. Keep them aside until all water drains. Heat oil in a non-stick pan and add asafotida and cumin seeds. When cumin seeds crackle, add the chopped onion.
Step 3
It takes about 5 minutes for the onion to become transparent. Add coriander powder, turmeric powder, red chili powder, Fennel Seeds, and salt. Mix well. Be careful with salt since we’ve already added some to the bitter gourd.
Step 4
Mix the spices well, then add the chopped bitter gourd. Reduce the flame and cover with a lid. After 5 minutes, stir the bitter gourd once. Add grated raw mango and mix, then cover again. After 10 minutes, remove the lid and stir the bitter gourd well. Check if it’s ready.
Step 5
It takes 25 to 30 minutes for the bitter gourd to cook. Crush one piece of bitter gourd with your hand. If it crushes well, it’s ready. If not, cover and cook for 5 to 10 minutes more. When ready, add dried mango powder, chopped coriander, and mix well.
Transfer the bitter gourd vegetable to a serving bowl. Garnish with green coriander leaves. Your Karele Ki Sabji Recipe is ready. Serve it hot with roti or paratha.

Tips And Notes


1 –
Bitter gourd is very bitter. To remove its bitterness, wash and peel it. Cut off its seam and apply a little salt. Keep it for 40 to 50 minutes. This method helps remove its bitterness.

2 – Always cook bitter gourd on a slow flame. It cooks better slowly. Cooking it on a high flame can cause it to burn.

3 – Make bitter gourd curry after grating raw mangoes. This removes its bitterness and adds a great taste. The curry will taste amazing.

4 – Use bitter gourd fresh. If it’s fresh, you don’t need to remove its seeds. It’s soft inside. But if it’s overripe and hard, remove the seeds to make Karele ki sabji.
