Step 1
First of all, we will wash the black gram with clean water and soak it in water for the whole night, before soaking the gram, we will clean it so that there is no stone in it. Drain the black gram after it has been soaked overnight and put it in clean water to boil over the flame. The water should remain one inch above the chana. We will file the gram in the cooker. In the cooker, the gram has to be put in 7 to 8 whistles for it to boil.
Step 2
After 7 to 8 whistles come in the cooker, we will let the pressure of the pressure cooker go out and after that pick up the gram from the spoon and press it with the fingers, if our gram is crushed well, it means that it has been boiled. If it has not happened, after one or two whistles, we will boil it further. After the gram is boiled well, we will turn off the flame and remove all the water from the gram in an iron sieve, We don’t have to throw away the water, we will make delicious soup and drink it.
Step 3
Now we will finely chop all our vegetables like garlic, onion, green chili, ginger, and coriander leaves. If we want to make kala chana with gravy then we will use chopped tomatoes otherwise not. Put a nonstick deep pan on top of the flame and add cooking oil inside it, when the oil gets heated well put cumin seeds and asafoetida inside it, when cumin seeds start to crackle then put chopped garlic inside it and turn golden. After the garlic becomes golden, we will put the chopped onion inside it and make it slightly transparent.
Step 4
After the onion becomes transparent, add chopped ginger and chopped green chili inside it and stir slowly, slowing the flame, after 10 seconds we will add all our spices like coriander powder, red chili powder, and salt, and mix them all. While stirring for 15 seconds, we will put the boiled black gram inside it and mix it well, increasing the flame slightly. Mixing everything well, cook for 2 minutes. After stirring for 2 minutes, add dry mango powder, garam masala, and some green coriander leaves mix well and stir for half a minute.
Step 5
After 2 minutes, turn off the flame and add lemon juice inside the chana as per the test, eat a little gram, and see if salt or any spice is less, then you can put it according to your test. Take out black gram in a serving bowl and garnish with some chopped coriander leaves,
